The Vegan Mom Saturday Pop-Ups!

Erica Hughes, better known as The Vegan Mom, has been doing vegan catering and meal prep for a long time. But I only recently discovered her on Instagram after a runner friend mentioned her at my Crosstown Run Crew meetup. That Run Crew, like almost everything in the world, is on pause right now. But The Vegan Mom is still very much at it! She's now doing Saturday pop-ups for awesome vegan meals to go.

I'd been wanting to try her food for some time, but the pick-up location is a good 30-minute drive from my house in Midtown Memphis. Last Saturday, I finally got the time to commit the hour round-trip drive!

She offers fun, indulgent vegan meals, like Philly Cheesesteaks, Un-chicken Sandwiches, Buffalo Cauliflower, and Bang Bang Broccoli. And there's always a lovingly prepared Southern dessert. Since I had quite a bit going on this Saturday, I wanted some things that I could pick up and eat throughout the weekend, so I went with the Vegan Rotel.



Y'all. Growing up in the South, we had rotel dip at every potluck and party. Folks here have cheese dip in their veins, I swear. Arkansas (where I'm from) even has a state-wide cheese dip trail, so tourists can travel the state and sample its finest cheese dips. True story. All this is to say, I KNOW good rotel, and The Vegan Mom's rotel was top notch! Even Paul liked it, and he still claims to not like vegan cheese. By the way, I've often said the one non-vegan food I miss the most is Pancho's Cheese Dip (the official cheese dip of the Mid-South). The Vegan Mom's dip was just as good as Pancho's, and that is high praise in these parts.

And just as cheese dip is my favorite snack food, my fave dessert is the decidedly Southern Banana Puddin. There's just something about creamy pudding, sliced banana, and vanilla cookies that just tastes like magic in your mouth. So I had to grab some of The Vegan Mom's puddin' too!



This was perfect. Creamy, dreamy. Loaded with cookies. Just the way I like it.

Orders must be placed and paid for (through Cash App) before 5 pm on Thursdays, and pick-up is on Saturdays between noon-3 pm. I let my mom and sister try a little of my rotel (only little because I didn't want to share lol) they thought is was better than "regular" rotel. Erica's food is soooooooo good. I can't wait until this Saturday so I can have it again.

Every food item that I have tried have been amazing!! Erica is a beautiful person inside and out and her food is delicious!! From the Bang Bang Broccoli to the Strawberry Shortcake!!!

My husband and I have been eating with her for some time now and the rotel is always my go to. I've tried everything o. the menu and have not been disappointed yet! Everything is finger licking good! Let me go ahead and place my order for Sat! ��

I ordered the "bang bang unchikn" and it was amazing. It's hard being a vegan in Memphis, because the options are so limiting. When I saw the ad on Facebook, I knew I had to try her food. It was the best decision I could've made that day! People like Ms.Erica put their souls and passion into their craft and I definitely tasted it!

Let me start by saying I AM NOT VEGAN; BUT,... The Vegan Mom Erica Hughes may be the only person who can change that. I’ve tried several of her dishes, Frisco Burger, Rotel, Buffalo Cauliflower, Bang Bang Broccoli, Banana Pudding and Strawberry Shortcake, just to name a few and I have NOT been disappointed. This young entrepreneur is on the precipice of greatness and I support her and her gift 100%. ⭐️⭐️⭐️⭐️⭐️

Love The Vegan Mom..you would think I've been eating her food for a long time..I haven't but after eating that unchick'n mac 'n cheese w/ a side of deliciousness called banana pudding, I'M A FOREVER FRIEND! You can't eat food this good and not become friends. Put in your order with The Vegan Mom and you will not be disappointed. Cannot wait until Saturday.

Hi,my name is Vickie. The Vegan Mom's food is great! I drove 30 minutes to pick up food while I was in the middle of completing a task on last Saturday. I don't normally stop what I am doing while I am earning extra money to drive 30 minutes to get the food and 30 minutes back. I had the bang bang unchicken and macaroni, the buffalo cauliflower, and the banana pudding. I started eating in the car. You will not be disappointed! I placed an order of 5 to 6 containers of the buffalo cauliflower one time. Everything that I have tried has been delicious. Erica's customer service skills, passion, and delicious dishes will have me being a customer forever.
