Pita Pizza!

My pal Leslie gave me a copy of Vegan Bites: Recipes for Singles as a Christmas gift, as well as a jar of her amazing homemade Jasmine Peach Jam. The book is great for folks like me who live alone. I always end up with days and days of leftovers any time I cook. Sometimes that's awesome, especially when a dish is freezable. But my freezer is at the overflowing point now, so this book came just in time. Vegan Bites features recipes with 2 to 3 servings (just enough for the next day's lunch).

Last night, I made my first recipe from the book — Pita Margherita:

It's just a simple pita pizza version of Pizza Margherita with Ezekial pita bread, mozzerella Teese, tomato slices, Parma, fresh basil, and a drizzle of olive oil. These were perfect with a side salad. Such an easy week night meal. I'll definitely be making this again and again.

Interesting book! My boyfriend always cooks crazy amounts of food and then he gets tired of eating the same after a couple of times! Maybe if I buy him this book...

The cake of my last blog starts with a basic dough of non-dairy milk, fresh yeast and flour, which has to be left resting for 2 hours. Then comes sugar (not much), more flour, lemon and orange peel, a bit of booze and margarine. It has to rest another 2 hours and then it's formed and goes into the oven. It's a rather simple cake-bread, but very tasty! (If you want to try it just let me know and I'll translate the recipe exactly for you)

I've seen this book but wasn't sure if I wanted to buy it or not, is it worth the money?

Since I am single half the time I know what you mean. My food is pretty boring lately cuz I just seem to eat soup. Lots of soup.

I was just looking at that book online last night. My freezer is overflowing, too, and I often can't eat all of my leftovers.

I think it's next on my list of cookbooks to purchase.

Awww, your little pizza is so cute! I always end up cooking way too much food too, even with my boyfriend eating it. It seems like all recipes are written for at least four people.

Yum! Pizza Margherita is one of the few foods I miss from the non-vegan days. I should give this one a try!

that's a great idea! a pita for a pizza crust. sometimes when i read things like that i just slap my forehead - why didn't i think of something like that?

That looks so yummy!! I don't live by myself, but I only cook for myself right now :) I haven't tried Teese though...I keep saying I'm giving up on cheese subs, but then I hear about another one that looks good *sigh*.

You left a comment on my blog that I wanted to respond to, but I can't remember what it was...::going to check:: Oooh, right. Catfish joint, yuck :( I did very well at the pizza place, definitely an easier place to accommodate. French fries are yummy, but a proper lunch they do not make.

That book sounds great - because even though I have Guppy and Monsieur Fish, I often end up eating alone or just Guppy & I (and she doesn't eat much). Luckily I have a freezer for leftovers!
