Supervegan Pancakes!!

Remember last year when I made every recipe-of-the-month from Sarah Kramer's awesome 2010 Go Vegan wall calendar? Well, I'm continuing that tradition in 2011. Kramer's 2011 Go Vegan wall calendar — featuring kitschy veganized versions of classic album covers — is proudly displayed in my kitchen.

January features Kramer as the waitress lady on the cover of Supertramp's "Breakfast In America." Here's the original album cover art. Imagine Sarah Kramer posing as the waitress and copies of her cookbooks making up the buildings in the background. I wish I had a JPEG of the actual Kramer calendar image, but those don't seem to be available online. Guess you gotta buy the calendar! It's only $4.48 on Amazon right now.

Honestly, I don't really know anything about the band Supertramp, but I do love the January recipe — Banana Pecan Pancakes!

These fluffy flapjacks (does anyone really call them that?) were naturally sweetened with ripe banana and flecked with a generous amount of chopped raw pecans. I topped 'em with a little warm maple syrup and a side of Gimme Lean vegan sausage. Best breakfast ever!

I was flicking through Sarah Kramer's "La Dolce Vegan" just the other day and saw those pancakes! They're on my must-try list. I like classic flavour combos usually: cinnamon-raisin and banana-coconut.

I'm looking at this calendar up on my wall right now and I realize I'm running out of days to make these pancakes. They do sound good, even if I don't love pecans.
You might need to help me understand what albums some of the month's pictures allude to. Supertramp I like a lot but there are some baffling photos in here...

BTW, Supertramp's "Goodbye, Stranger" is in one of my all time fav flicks: Magnolia. Gotta love William H. Macy.

Thanks for the restaurant suggestions. I checked out Dejavu's and Woodlands's website...OMG looks like they have some tasty stuff. I think we are going to head to Memphis around lunch time Monday, so one of these will probably be the place we eat!
I remember reading about your review on Fuel...that stinks that they are closed on Mondays!

Well, my absolute favorite is probably chocolate chip, but more frequently I like peach and nut. (chopped frozen peaches and walnuts or pecans)

I like oatmeal and blueberries or sometimes peanut butter and chocolate chip. You're seriously making me want to add pancakes to my first breakfast after the cleanse!
