Happy Summer Solstice!

I had to forgo my usual summer solstice celebration tonight to meet my good friend Leslie for dinner at the India Palace restaurant. She was in town from Asheville, North Carolina, and I wasn't about to miss a chance to hang with her. However, I did have a pretty summery lunch today — a BBQ Tempeh & Carrot Sandwich with Poppyseed Coleslaw and extra Memphis-Style Barbecue Sauce:

I've posted about this recipe before. It's another crunk cookbook tester, but I made it again just to make sure it was okay. I'm happy to report that the sandwich, slaw, and homemade sauce were just as tasty the second time around.

I served my sandwich with some of the best summer corn I've ever tasted! My dad brought me a bag of corn picked up from a roadside produce stand, and it was so deliciously sweet and juicy. I covered the corn with Bryant Terry's Spicy Garlic-Miso Dressing from Vegan Soul Kitchen:

If you haven't tried Terry's corn dressing recipe yet, it's a must-try. This recipe is by far my favorite from VSK so far.

That burger is mine! I NEED IT! Seriously, your cookbook will not get here soon enough.

I think I need to order his cookbook too, because that dressing looks and sounds fabulous. Summer corn - nothing better! Think I'll have some today. Although, mine is from frozen not fresh. :-(

I have never seen sauce on corn-on-the-cob before. Really beautiful pic. Especially with the flip flop holder.

Mmm! I've been eating summer corn like crazy- raw and sweet. I need to try that sauce to mix it up. And that tempeh sandwich looks AMAZING. I love slaw on my sammies.

oooh, i can't wait for corn! it's not quite here yet... but every week I am scouring the farmer's market - eagerly awaiting its arrival. Also, I haven't tried that VSK corn dressing, but you aren't the only person who has recommended it. Usually I just think corn is so damn perfect the way it is... but I promise to try the dressing at some point this summer!

I didn't know it was solstice yesterday until a friend mentioned it last night. We stuffed out faces with vegan sausages at a baseball game to celebrate :) Your sandwich looks delicious!
