Yee-Haw! Cowboy Cookies!

Despite growing up in the South, I've never heard anyone actually say "yee-haw," except maybe in a joking manner. But I feel like it's an appropriate expression to convey my excitement over these delicious Cowboy Cookies from Vegan Cookies Invade Your Cookie Jar. No joke.

Words cannot describe how awesome these cookies are. And honestly, I didn't expect anything less than perfection from Isa and Terry. This is the second recipe I've made from the book, and both (the other were Peanut Butter Blondies) have been outstanding.

Cowboy cookies contain a little bit of everything — chocolate chips, toasted pecans, coconut, and oatmeal. The oats make for a soft cookie that's chewy in all the right places. Brown sugar lends these cookies an authentic grandma-made taste, and you can't go wrong with pecans and coconut.

I must admit, however, that I made these out of guilt because I'm a bad friend. You see, my best friend Nathan's birthday was last Saturday (Feb. 20th), and since he usually organizes some sort of get-together, I've never bothered to write the date down. This year, Nathan opted for a low-key birthday with no party (crazy talk, I know ... birthdays are supposed to be big productions), so he didn't remind anyone. And I let the day totally pass me by.

When Nathan reminded me a week later, I felt so bad! We've been best friends for years. How could I forget?! He wasn't mad at all. Even his own parents forgot his birthday. But that's just silly. So I asked what his fave cookie was, and when he responded "anything with chocolate and pecans," I knew cowboy cookies were in order. Thankfully, the birthday boy loved them. And I've learned a lesson about writing down birthdays.

Yum! Some of the best cookies I ever made were similar to that, but from You Won't Believe It's Vegan. They also had shredded carrots in them, and were made with coconut oil!

These look awesome, and the perfect birthday cookies! I think I need to say YEE HAW too! Really, these cookies look so hearty they could be a meal in themselves. And yes, I also expect perfection from Isa and Terry! They've never let me down.

I can't believe I haven't tried that recipe yet. Everyone has been saying that they are awesome.

I've been in Charlotte for the last 4 years and I never heard anyone say "yee haw" either, except for my room mate freshman year. She was the stereotypical "red neck" and I loved her for it.

we write down birthdays on our calendar each year, but let me tell you, just because we write 'em down doesn't mean we always remember to look at the calendar and make note. ah ha ha! i'm so glad Nathan really loved Isa & Terry's Cowboy Cookies! they look gloriously good, and i'm with you Bianca - you can't go wrong with pecans and coconut! mmmmmmmm!

Mmmmm.. the cowgirl version of these is one of my all-time favorite cookies.

Sometimes it's more fun to spread out birthday celebrations- especially if it involves cookies!

One year our in-laws forgot our wedding anniversary and so we have to give them a hard time every year. It's fun! lol!!

i love that cookie book. :) do you also have vegan cupcakes take over the world? i don't, but after getting through a few more cookie recipes i think i'll have to try some cuppy-cakes. ;)
i recently made the ginger mac-nut cookies and boy were they delicious!
I've never made cowboy cookies but I was actually just drooling at the picture in the book yesterday...glad they were a success!

Hey Samantha Angela! I made the shirt using iron-on letters, originally to wear to the gay pride parade. But I wear it around anywhere now.

These cookies look AMAZING. After cookies like that, I'm sure Nathan wants you to forget his birthday every year. He seems like a great friend.

Cowboy cookies are a great way to make up for a missed birthday! I totally understand not wanting to make a big deal of one's birthday, my birthdays are extremely low key too.

The cookies look perfect! I bought that book a few days ago and it's killing me that we're travelling and I can't bake anything. I made a list of cookies that I would like to bake. It's a long list! :)

Those cookies look great, and better late than never regarding the birthday :) I love cookies with a bunch of different flavors like these, and I don't know why I don't have that book yet.

My coupons from French Meadow took a really long time to arrive, so maybe they're still on the way.

You know, I've only made the chocolate chip cookie recipe from that book--thinking it would be a good test run--and they came out too oily to eat (both times). She acknowledged that was a problem for some testers and didn't know why, but it's kind of turned m off from the book as a whole. Maybe I should get back on the horse and try these cowboy cookies.
