Berry Time!

I picked up some organic blueberries from the Lansing's Farm at the farmer's market last Saturday, and I knew exactly what I wanted to do with them — blueberry pancakes! These are the Blueberry Lemon Corn Pancakes from the Veganomicon:


Unfortunately, my first batch didn't turn out as well. I didn't even take a picture, as they were what Alice in Veganland recently described as "pancake scramble." Its because I didn't have non-stick pans, of course. So I bought some. Cheap ones, like dollar store ones. I'm sure they won't last long, and they'll likely chip pieces of toxic crap into my food. But I don't care. They were just a quick fix. I NEEDED pancakes!

These were really yummy, especially with a Julie Hasson sausage link. The combination of lemon zest and blueberries and corn meal was divine! My only complaint is that they really weren't very fluffy. I've noticed Isa and Terry's pancake recipes tend to create a pretty liquid-y batter, and that may be the culprit. Anyone have any thoughts on what keeps a pancake from being fluffy?

Speaking of berries, my friend Aaron just stopped by with two big ol' freezer bags full of blackberries! He picked them on his family's blackberry farm in Arkansas.


Yea! Now I can make blackberry muffins and maybe even blackberry jam ... berries (and tomatoes and flip-flops) are the best part of summer!

those pancakes look amazing... im eating blueberries as we speak!! there really isnt anything that enriches food like fruit!

Sorry that the first batch didn't turn out too well; but hey, it looks like you perfected the next batch!! And oh my, those blackberries look to-die-for delicious.

I'm sorry you won't be at the lunch on Saturday, but I hope you have a great time in Nashville celebrating! And don't worry - I've actually forgotten my wedding anniversary until the next DAY.

I agree: berries are one of the best parts of the summer! (also: cocktails, the beach, sunshine, summer salads)

Haha I told Alice that the idea of a pancake scramble sounds promising.

And I just bought blueberries, so now I want pancakes!

yeah, my pancake scramble wasn't exactly tasty though... But yours turned out pretty good at the end! I'm not a pancake expert (but that could be fun...), but I really think the batter was too liquid.

Those blackberries look amazing! Good looking pancakes too. Even if they weren't fluffy. I'm sure your mom would know what to add to make them fluffier? Maybe?

Yum! Those pancakes look mighty tasty, and I totally need to make some of the Julie Hasson sausages . . . I've had fairly good luck making pancakes in my cast iron skillet. I think part of the secret is making sure the pan isn't too hot.

I'm not a pancake expert...but it seems that adding more flour and/or baking powder makes them fluffier. Also, a touch of vanilla is pure yumminess.

mmmmmmmmmmmm! the pancakes look amazing - and i love the bowl 'o blackberries, too! we have blackberries just kinda growing in the field behind our house - so i'm going to get a move on picking a bunch to make some berry crisp - and i'm gonna have to check out the pancake recipe, too. yours are droolworthy, fo 'sho!

YUM! Blackberries! You should make blackberry rugelach or something...if you're anything like me, though, you don't want to invest the time to bake anything, and therefore just go straight for the fruit! (Ovens be damned!)

I've noticed the thin-ness of these pancakes and the ones from VWAV. I actually like the texture of the blueberry corn cakes, they get kind of thin and crunchy. Real "normal" pancakes though, I want 'em fluffy. Maybe just reduce the liquid a tad?

I'm so glad you like the sausages. Your breakfast looks fantastic, and I'm completely jealous of those gorgeous looking berries!

We have a pancake recipe on everyday dish that's nice and fluffy. The secret seems to be lots of baking powder.

The problem with your flatcakes may be how much stirring you are doing while fixing the batter. When adding your liquid ingredients to the dry, you'll want to only stir the mix enough to fully moisten the dry stuff, leaving it with little lumps. Just make sure to get the really big lumpies out & they should be fine.

Even though that goes against all you've learned with cooking, if you stir the batter completely smooth then your pancakes will just run & be nasty McFlatties. When they are cooking just flip them once because if you flip them alot they'll deflate.
Also allowing the batter to sit for about 5 or so minutes before cooking should help a bit too.
