Sushi for One

Sushi is so easy to make at home, but for some reason, I've never made sushi in small quantities. I've only made it at home for parties, and I always make a ton.

But one night last week, I decided to make sushi just for little ol' me. I had a half-used tub of Tofutti Cream Cheese that needed to be used, and I'd run across the recipe for Orange County Rolls in The Complete Guide to Vegan Food Substitutions:

These are simple veggie rolls with a touch of vegan cream cheese and a sriracha-mayo sauce for dippin'. Y'all know how I love sriracha, and when I saw that ingredient and the cream cheese, I knew I must make this, stat. The rolls were yummy, and dipping them in a mayo sauce rather than the usual wasabi and soy sauce was a nice change.

The recipe makes four rolls, and since I don't like to eat leftover sushi, I rolled a fresh one each day for four days. I made the rice in one batch and refrigerated it. Then each day, a few minutes before rolling, I heated a small amount of rice with a few tablespoons of water in the microwave. Then I let it cool a bit before rolling. Microwaving with water re-stickifies the sticky rice, which works much better for rolling than dry, cold white rice.

On the side, I had a garden salad with a homemade Sesame Salad Dressing from Vegan's Daily Companion:

The dressing only has four ingredients — sesame oil, ume plum vinegar, agave nectar, and water. I'd never used ume plum vinegar, so I wasn't sure what to expect. It's really salty on it's own, but it was perfect when mixed with the sesame oil and sweet agave.

My favorite is the tofu skins over rice... but the are almost sweet enough for dessert. I also like anything with avocado or fake cream cheese, you're roll looks yum!
Love the idea for the salad dressing, I have a brand new bottle of sesame oil I'm looking for uses for.

If I eat sushi, it has to be inside out and have tons of sesame seeds on the rice. I've never been a big fan of nori, so that helps cover up the flavor for me. :)

I love any sushi with natto in or on it! It has such a great pungent, cheesy flavor, and the rice cuts the slimy texture and the smell. I also adore the spicy tempeh rolls from Veganomicon!


I am a sucker for any sushi with avocado in it. Though I like nori, I am also a big fan of the inside out rolls with LOTS of sesame seeds like Scissors and Spice said!

I like spinach and avocado in my sushi rolls, or shiitake mushrooms! Your sound easy and awesome.

I load up plain old cucumber rolls with wasabi and pickled ginger. In truth, my favorite part of sushi is the seaweed wrapping it. Anyway, that salad you had there looks far too delicious.

My favorite sushi roll is quite simple : avocado and veganaise, with green onions or cucumbers.

I've had sushi rolls with cream cheese and fake salmon spread and it is also amazing, but harder to come by.

Next time I'll make sure I try my sushis with a mayo sauce. I'm curious.

I have a few different favourites... plain avocado, seaweed, pickled vegetables, inari skins... and of course inari sushi as well. I can't choose!

Sushi is on my list of things to try but I have yet to do it. Maybe if you keep telling me how easy it is I'll eventually be convinced.
