Sweet 'n' Savory

As I've mentioned before, I'm slowly working my way through Celine and Joni's 500 Vegan Recipes. And by slowly, I mean I'm on chapter two — Sweet and Savory Muffins. I've been craving muffins for awhile now, so every single recipe in the section sounded delicious. I had a very hard time choosing just one for this week's breakfast. But after much deliberation, I finally settled on the Jam-Filled Soda Rolls:

Why? Because the entire recipe only contains two tablespoons of sugar! That means a healthier breakfast to start my day. Since they're not very sweet, these muffins are more like rolls (hence the name). I used raspberry preserves in mine, but any jam or fresh fruit preserves will do.

For some reason, the blob of jam sunk to the bottom of most of my rolls and leaked out, creating a hollow crater where the preserves were supposed to be. I actually added a little extra jam after halving this one for the sake of the picture. Nonetheless, these are delicious!

To balance the mild sweetness, I also made a batch of Crispy Seitan Bacon from 500 Vegan Recipes:

Wow! I typically only make tempeh bacon and very occasionally buy the Lightlife Smart Bacon, but I've never even thought to make bacon from vital wheat gluten flour and beans. That's the base of this delicious baked bacon alternative. Celine and Joni are genius. Just genius.

WOAH! That bacon looks AWESOME! I've never thought to make it from seitan either, but now I most definitely will. Only problem is we haven't been able to find vital wheat gluten in almost a year....grrr....

Those muffins look so pretty, the perfect way to start your day!

Due to the fact that I watch carefully my sugar intake (I'm not diabetic, I just try to avoid consuming any white sugar), this would be a great breakfast alternative & change for a vegan. They look great and very tasty looking.

I may have to get my hands on that book just to try the seitan bacon. I don't know why I haven't gotten it yet.

What can I say? I love that cookbook! The jam filled soda rolls were one of my favourites. I should make them again!

The jam rolls and seitan bacon look great! Such a great book. How have I not made either of these recipes yet?! Maybe I should adopt your method of following recipes in the order they're written, rather than just skipping around...ya know, to make sure I don't miss anything. :)

Both these dishes look amazing!

Thanks for the kudos on the salad. I tried to get really crafty with that one, and we're blessed to have some amazing farmers markets here in Los Angeles. I think I'd go crazy if I didn't have such a variety of ingredients at my disposal.

I'm glad to hear I'm not the only one who faces the dilemma of morals vs income. It's such a tough decision to make!

I am happy to see that you love 500 Vegan Recipes so much! It seems that Veganomicon gets all the love, but I have found more recipes that I love in Celine and Joni's books--especially this seitan bacon. I just put it in some calzones the other night.
