My pal Justin over at the Chubby Vegetarian featured some tasty lookin' Lemony Roasted Potatoes on his blog last month. I made a mental note to try them, and I finally found time on Friday night:
I made these with local farmer's market new potatoes, and they were super easy. According to Justin's directions, I tossed the potatoes with olive oil, salt, and pepper and then roasted them on 500 degrees for about 15 minutes.
Then I took 'em out and tossed them with lemon zest, parsley, and a little lemon juice from the lemon I zested. Eaten with a Boca vegan chicken patty smothered with noochy "cheeze" and a side salad, these were the perfect beginning to fun Friday night at a local bar with friends.

those lemony potatoes look scrumptious, Bianca! (and roasted perfectly, might i add!) i would have never thought to combine lemon + potatoes. this we're gonna have to try. and thanks for the link to Justin's blog - i'm check'n it out - fo 'sho!

Oh man, those look delicious. The lemony roast potatoes from vcon have totally sold me on the potatoes + lemon combo.
I had a bad experience with horrific lemon potatoes in mexico but they were soggy potatoes soaked in a gross claggy lemon sauce. Also, that chef was possibly the worst on earth!

I don't usually eat potatoes, but roasted potatoes are definitely the exception! And yours look perfect!

hi! i just stumbled upon your blog through some other vegan blogs, and i just wanted to tell you i love your style and creativity in cooking! i'm vegan for ethical and environmental reasons, and only health reasons secondarily, but i'm honestly such a health freak i've always been a little afraid and grossed out by southern cooking, but your recipes look really healthy for the most part, while still keeping their southern flare, and i think that's so cool! after looking through tons of your old posts, i really want to buy your cookbook when it's released! when's the date?! also, i really like your raw food mondays idea. i'm studying abroad in scotland right now, but once i get back to the states, i think i might implement a once-a-week raw eating day like you have! Anyways, just wanted to say hi and tell you i like the blog (and your writing style is cute and fun to read as well...not overly bubbly and fake like some bloggers lol)

also, i forgot to say, i also never even buy/almost always refuse to eat white flour. it's nasty!! whenever isa says in vctotw "you can substitute 1/2 ww flour for white" i'm like "wtf, i'm doing all of it!!" i guess that just made me like your blog and cooking style even more..the same way i love dreena's books b/c i never have to make substitutions!

Those kind of sound like the Vcon lemony potatoes, which are so good! Apparently Justin was more in tune than I was to how good lemon pairs with potatoes - I just recently tried the two together. Thanks for recommending Justin's blog - I can't wait to have a look!
