I don't own the widely acclaimed My Sweet Vegan by Hannah Kaminsky ... yet. But I was lucky enough to receive a "Meatless Mondays" email from FARM Sanctuary earlier this year that include Hannah's recipe for Strawberry Love Muffins. It's also posted here.
Unfortunately strawberry season is already over here, but my friend Aaron brought me a big ole' batch of blackberries last week. So I subbed fresh blackberries in place of the recipe's frozen strawberries to make Blackberry Love Muffins:
I also substituted whole wheat pastry flour instead of white flour and evaporated cane juice in place of sugar.
These are so moist and tasty. They're slightly heavier than a cupcake, but if you slathered the tops with frosting, they could probably pass. I've been eating them every morning this week, and it feels like having dessert for breakfast ... but in a healthier, muffin-y way.
If you haven't tried this recipe, I highly recommend it. I've also made these with blueberries, and those were yummy too. Any berry will do.

ohhhhhhhhh, these look so yummy! we just made up some blackberry muffins last night, too! i've got blackberries EVERYWHERE - it's banana pants! i'm going to use this recipe for the next batch 'cause yours look awesome, Bianca!
Haha, I totally used that recipe the other day, with a different berry as well!! I'll be posting about them on Friday (no worries, I didn't use the same berry substitution as you, ha).

I got your comment on my blog, and that's so funny that you know someone who works at Laughing Seed! We absolutely LOVED that place! We ate there at least 5 times, and sometimes twice a day. It was good! I loved Asheville, so I see why so many people would move there. What a small world!
I know I would LOVE these muffins...I tried Hannah's strawberry love muffins and I had to freeze them so I wouldn't eat them all haha. I bet a little blackberry jam spread on top would add a great touch too!
And yup that's coconut on top of the super charge me cookies---you definitely should try them :0)
That recipe is so easy and so good. I made the strawberry love muffins last week for my daughter and ended up eating almost all of them myself. It's a good thing they're not very big!
p.s. I'd rather get books from the library than buy them, but I made an exception for My Sweet Vegan. I hope you can get a copy soon - you'll love it!

I'm so glad to know I'm not the only one who hasn't gotten My Sweet Vegan- I really want to, but budget restrictions are holding me back :(

I am a muffinaholic. And I want these. BAD! It is sad that strawberry season is over though. I had my last batch a week ago. I would like blueberries or raspberries too. Good to know about the whole wheat flour too.

We should totally start a potluck. Who knows, maybe it would bring the vegans in Memphis out of hiding. I know there has got to be more than us.
Haha, I try to eat healthy as much as I can because I have SUCH a sweet tooth (but I'm sure you could tell from my blog title!)! You should really try the sandwich, it makes me miss the old tuna/chicken salad sandwiches less and less!
