Vegan Buttermilk Biscuits and Fakin' Bacon

On Monday night, I whipped up a batch of my Whole Wheat Buttermilk Biscuits to eat for breakfast throughout the week:


The recipe's going in my cookbook, but I've been tweaking these things for months. It took a while to get the recipe light and fluffy. They're made with whole wheat pastry flour, so they're kinda healthy-ish ... though there's non-hydrogenated shortening in them too. You can't make good biscuits without shortnin' (that's what we call it in the South).

I sliced these babies open, slathered 'em with Earth Balance, and drizzled 'em with a good amount of sorghum (which, as I mentioned in an earlier post, is similar to molasses but not so intense).

On the side, I had Tempeh Bacon, which is also going in the cookbook:


The recipe involves marinating the tempeh slices and baking them. I used to use tofu slices for this recipe, but I feel like tempeh does the bacon-y marinade more justice. It has the proper bacon mouth feel too....I love the phrase, "mouth feel." It's so weird.

I am so glad someone else still makes good old-fashioned biscuits with shortnin'! I can't go to long without a batch of biscuits, especially when they are just fresh out of the oven.

I hope you know I am dying to read the cookbook!

OMG - is that your breakfast?!!! MMmmm nom nom nom ... HOT fluffy biscuits and tempeh bacon sounds SOOOOOOO good to me now .... I just got back from work and I'm HUNGRY and it's so COLD out there!! Gah!!

Btw, some vegan gravy would be nice ;0) Eek!! I'm such a glutton!!

I like the phrase "mouth feel", but something about "toothsome" rubs me the wrong way :)

The bacon and biscuits look wonderful. I'm with cecilia; something about this breakfast makes me want gravy.

I woke up one day with a craving for biscuits and gravy. I had to figure out a way to deliver, because some cravings you just HAVE to have. I made some pretty good but unattractive gravy. It's in an older post of mine. However, the biscuits that you made look soooo good. I can't wait for your book.

I have heard so many wonderful things about tempeh bacon and I will try it. It looks supremely luscious. And whole wheat biscuits - I mean, girl, come to my house and cook for me! I cannot wait for your book - promise me you will have tons of photos - I NEED photos of vegetarian food - it is essential!

I greatly admire you for this recipe-tweaking business. The results look delicious. You just have a fabulous-looking Southern breakfast going on here! Now that my tempeh cravings have skyrocketed, I'll have to try baking tempeh. That's something I haven't done before!

I can't WAIT for your cookbook to come out...My family is big on the Sunday morning biscuits & gravy/bacon/eggs, so this veganized version sounds peeerfect for the only non-omni of the house :0) Oh, and definitely try microwaving your sweet potato before cutting into it...after having small but painful experience with cutting it raw, I'll always micro it! It works great with acorn/butternut squash too!

My favorite meal is breakfast and I'm always disappointed that so many vegan options for breakfast are sweet (except the old tofu scramble standby). So, I'm doubly excited about the prospect of your cookbook!

it's so true - biscuits without shortnin' just aren't the same. and your biscuits look AWESOME! flaky wonderfully deliciously awesome! and tempeh bacon - man, it looks amazing!

oh, and thanks for sharing your FnB experiences! it's good to know it's a great organization and lots of fun, too! makes me feel less intimidated knowing someone who's helped them out. now if i can just get up the courage to help them cook one of these sundays.... :)
