Whew! We made it to the first weekend of Vegan Mofo, and I'm still hanging in. Today's theme is "Late Night Snack – Tell us what you’re midnight snacking on!"
Honestly, I rarely snack after dinner. I typically eat hearty meals, so I'm not hungry late at night. Plus, on week nights, I'm in bed by 9:30 or 10 p.m. since I have to get up so early to run the next day. But every once in awhile, on a weekend, I'll make a big ole bowl of popcorn, whether I'm hungry or not. You don't need to be hungry to enjoy popcorn.

I'm a popcorn addict. Seriously. If popcorn is around, I'll eat ALL OF IT. It doesn't matter how much there is. I can't stop until it's gone. I've seen people at the movies leave half a tub of popcorn uneaten. I don't understand that at all. All popcorn gets eaten in my world.
Like all vegans everywhere, I prefer my popcorn with nooch. Typical, I know. I'll pop a big bowl in my popping machine (it's a mini version of one of those movie theater-style poppers — thanks mom and dad!) using coconut oil. And then I'll spray the popped kernels with non-stick spray before tossing with super-fine popcorn salt and nooch. Sometimes, I add dried dill and a little drizzle of flax oil. Other times, I add Cajun seasoning or garlic powder. Perfection.
