Spaghetti Bitch

I have long been a fan of the Skinny Bitch empire. Kim and Rory are crude-ass, potty-mouth bitches on a mission to veganize the world. And seeing as how I'm pretty vulgar myself, their approach is right up my alley. So needless to say, I have all their books and exercise videos (I even have that silly Skinny Bitch journal that I never use). So of course, I asked for Kim Barnouin's Skinny Bitch: Ultimate Everyday Cookbook for Xmas! But I got so many books for Xmas, I'm just now getting around to cooking from it.

The glossy full-color, hardback is full of mouth-watering, healthy vegan recipes. But I'm always a sucker for a simple pasta dish, and this Spaghetti with Spinach in a White Wine Garlic Sauce was begging to be made:

It may not be all that pretty, but it was damn good. The sauce is made from olive oil, mushrooms, tomatoes, spinach, garlic, white wine, and vegan parm. The wine was Orleans Hill Alexandria, an organic, vegan white blend I purchased at my favorite vegan-friendly wine shop, The Corkscrew.

I served this with a big ole green salad topped with fresh corn, carrots, bacon bits, and Italian dressing. Washed down with more white wine, of course. You have to make use of the rest of the bottle or it will go bad, right? ;-)

What sort of recipes do you gravitate toward when you break open a new cookbook?

I'm so grateful that there are so many fabulous vegan cookbooks out there now. I love pasta with any kind of sauce and that one looks fabulous. Yet another book to go on my Amazon wishlist!

i gravitate towards anything with all veggies as ingredients. i try to avoid the soy, wheat and flour-heavy dishes and look for hidden gems made of only veggies, oil and spices...

Waw, you are one of the few that seems to like Skinny Bitch.. (I haven't read any myself).

I'm also a sucker for pastadishes. Or tofu, yum!

Skinny Bitch was great! I even purchased Skinny Bitch in the Kitchen and I love it! The granola rocks! I'm so glad to see other people enjoy their sense of humor - I loved it and a few of my friends have already read that book too and are making life style changes. I heard it was a good book from a bunch of people, as well as The Kind Diet, so I read both while I was still eating meat (wasn't even interested in becoming a vegetarian or vegan). Welp, after reading both books I stopped eating meat and it's been almost 3 months and I've never felt better! I cut out cheese and milk but still eat eggs on occasion. I love your blog - please keep on posting! :)

I've actually never been a fan of their books (the first one, anyway, was full of too many processed ingredients for my taste), but this actually looks great! I'm also an "easy-to-make" recipe seeker when I first check out a new cookbook. Mmmm. . . pasta sounds delicious!

Never tried Skinny bitch, but the sauce sounds yummy.

Whenever I pop open a cookbook, I gravitate to whatever recipe I can make with ingredients I have on hand, to test it out. After that, I'll take the time to venture to the store for more complicated recipes

I LOVE vegan parm, I use it in my sauces too, or just with oil and garlic. this looks tasty.

I always head straight for the main-dish salads, especially in Isa and Terry's cookbooks. I love big, hearty salads and am always looking for new ideas!

I always love to make the seitan recipes (I love making my own!), but after that, it depends what I have in the pantry and what sounds tasty. I'm a soup-slut, so I'm always making those.

I thought the tone of the Skinny Bitch books were great, although I was very skeptical. I'm a pretty big dude.

I love those bitches!!!! lol - they converted me 5 years ago and i've never looked back! but yeah i don't use so many 'meat' substitutes anymore, i tend to be a bit more on the natural side, but i think they did a great menu for those converting!
I am a fan of antyhing skinny bitch!
i tend to be one who reads the whole lot of any new cookbooks i get and then i put a post-it note in the front of all the recipes that i want to try!

As a vegetarian I eat lots of pasta and yours looks delicious. I especially like using fresh vegetables.
