As I've mentioned a few times before, I'm currently working on a cookbook of veganized trendy foods from the decades of the past century. Some decades are easy: The 1950s are a wealth of culinary awesomeness. But what did people eat in the 1980s?
I don't know about you, but I ate a lot of meals from boxes and bags. My mom is an excellent cook, and she made plenty from scratch. But like so many kids of the 80s, I still wanted the frozen pizzas, TV dinners, and Hamburger Helper. While the 1980s chapter will include some vegan versions of from-scratch dishes, it'll also include some vegan versions of those ubiquitous convenience foods. Like Pop-Tarts! Who didn't worship Pop-Tarts in the 1980s?
This weekend, I came up with a vegan version of this popular recipe that I found online. Mine is made with vegan butter, of course. And I use whole wheat pastry flour instead of white flour, so despite the cup of butter (non-hydrogenated, of course!), maybe they're kinda healthy-ish ... okay, maybe not:
The recipe still needs a little tweaking, and I plan to experiment with fillings. These were filled with blackberry jam, but I know I want to try a chocolate filling and maybe a brown sugar and cinnamon one too:

Your homemade pop tarts look very tasty! I remember that I used to enjoy the s'mores pop tarts. When you make the chocolate-filled ones, maybe add a layer of Ricemellow marshmallow cream, melted Sweet & Sara's, or Dandies!
We made peach pop tarts with tarragon-white pepper icing for a recent dinner. It was the hit of the evening! Pop Tarts are definitely in our collective food memory.
When I think of the 80's, I think of TV dinners and mac n' cheese... and pop tarts! Those look yummy :)

i was thinking about what i was eating in the 80s (i'm a tad bit older than you) and remembered we cooked from the Silver Palate Cookbook by Julee Rosso and Sheila Lukins. it was ALL the rage! might want to check that out for some 80s inspiration!

I got so excited about this! Imagine all the options you have with the filling. You could put dandies marhsmallows (or ricemellow) and chocolate in for smores pop tarts.

I bet a reader has a copy you can borrow (or maybe have) if you can't find it in the library. My family's copy is probably long gone...when my parents moved from MA to FL I'm sure it went adios in a yard sale...or I'd send you mine! Good luck finding a copy! I'm sure there's one out there somewhere!

Yesssssss. I request smores and strawberry flavors! When I was a kid I always wanted the crusts cut off, and as I grew up they became my favorite part.

YUM! I really miss pop tarts! Brown sugar and cinnamon was always my fave!
They look real (at least what I remember about pop tarts from the 80's).
