When Vegan Brunch first came out out, every blogger and their mom made the Swiss Chard Frittata. But for some reason, it kept getting pushed down my to-make list, always losing out to the VB tofu omelet or tofu benedict. Well, I finally got around to making that frittata for this week's breakfast:
I'm not sure what I was waiting for! It only has a few simple ingredients and it includes super-healthy greens for a morning power boost. I've made a number of vegan frittatas in my day from various cookbooks, but this one has the most authentic texture and taste. I bet you could even fool an omni with this recipe.
This morning, I served myself a generous slice of frittata, a piece of whole grain toast slathered in Earth Balance and raspberry fruit spread, and a glass of iced green tea. Thankfully, the recipe made four servings so I'll be enjoying the same breakfast for three more days!

that looks amazing and if there is no soy in it, I'm in biz-nass. But I bet it's made with tofu. Gosh it looks great though!!!
That looks great! Much better than the curried cauliflower one, which I liked, but didn't LOVE.
I have yet to make this also. Sounds like it needs to be bumped to the top of the list!

Also, I was at the bookstore last night, and saw "30 Minutes Vegan" sitting on the shelf. I have tried to ban myself from buying anymore cookbooks for awhile, but I kept thinking about your un-stiryfry from last week, so I couldn't help myself... I blame you, Bianca! :) But I'm excited to start using the book. All the recipes look/sound delicious!
Wow! This looks really great. Im such an oatmeal person in the morning. But Id love to give this a try for something different. Looks great!

Those fritattas are so easy & delicious. I made the dill-shiitake one the other day and it blew my mind.
man, i need to get a copy of vegan brunch already! the swiss chard frittata looks outstanding, Bianca! i love that you enjoyed it alongside some toast with fruit spread (raspberry is my fav!) 'n earth balance & sweet tea, too! hooray for one helluva breakfast & yay for leftovers, too!

Ack! I've made heaps of stuff from that book already but those are my two favourite things so far.
I LOVE FRITTATA! Such a warm, comforting dish for anytime. I love mine with loads of shrooms, onions and garlic. This one looks fantastic!
