Butterscotch Cookies

About a month ago, my pal Stephanie (of Poopie Bitch) let me in on an awesome secret — Food Lion stores generic brand of butterscotch chips are accidentally vegan! We don't have Food Lions in Memphis, but Steph bought EIGHT bags when she was in Nashville on vacation (Steph is a bit of a food hoarder ... yep, I'm calling her out).

My boyfriend lives in Clarksville, a small town on the outskirts of Nashville, and there's a Food Lion down the street from his house. So when I last visited him, I had to pick up a bag. Yep, just one. Not eight. And that bag sat in my pantry for weeks while I waited for some inspiration.

Then, while perusing the lovely Celine's Have Cake, Will Travel, I ran across her recipe for Butterscotch Pecan Cookies:

All the ingredients were already hanging out in my pantry, so I threw these together pretty quickly (you can't see a pecan in this picture, but I swear they're in there!). I sorta overcooked them since my oven's been acting crazy with cookies lately. When I bake cookies for the time recommended in a recipe, they're never done enough. So I added about four minutes to Celine's ten. And that was a bit too much.

They're still tasty, just not as chewy as I like. Of course, that's not stopping me from stuffing my belly!

It's cool, I already called myself out on my blog - and I even gave you credit for the revelation :) (maybe if you read my blog you would know that! nyah!)

Those cookies look so good! I put some of the butterscotch chips in brownies a couple of weeks ago - so at least I'm actually USING them! haha.

oooh i wish there was a food lion around here! everyone says that price chopper has a vegan butterscotch chip (its generic store brand, too), but all of the stores here only carry chips with dairy...i've checked almost all of them in the kc area! oh well! i am happy that you get a tasty treat!

That's what I do when I make any cookie; stuff my belly! Mmmmm! Plus, Celine's cookies pretty much rule the vegan world so you can't help yourself!

I am working on my interview this afternoon!!!

Looove butterscotch cookies. Price Chopper's are also vegan. We have one near me, but I never ever shop there...only for the butterscotch chips!

I made some butterscotch cookies a few weeks ago, they've always been a fav of mine.

Darn! We have no Food Lions down here. It's been ages since I've had butterscotch (since before I was vegan, so back when I was a preteen!!) so I'm going to have to get my hands on a bag of those next time I'm out of town.

I don't think I've ever thrown out cookies - they're always edible. Yours don't looks overdone at all!

I have two bags of butterscotch chips in my cupboard, but I kind of refuse to use them for anything but a special occasion, since I can't get them here. But I'm starting to worry that I'll never use them!

How random, I lived in Clarksville until a few months ago and I left with three bags of the chips - when I googled vegan butterscotch cookie recipes this was one of the first entries. Tiny vegan world.
