Eazy Cheezy

Sometimes a few random condiments, spices, and tofu can combine to taste just like something they're totally not. Like this Easy Cheeze Danish from The Uncheese Cookbook:

It's just crumbled tofu mixed with a little maple syrup and some other spices (I can't tell ... just read the book) and broiled in the oven over sprouted grain toast. But it tastes surprisingly like the cheese danishes I remember from my omni days.

Of course, it's far, far healthier than those saturated fat-laden donuts. And that made it a perfect start to my morning, served with my usual iced green tea and fresh-squeezed orange-grapefruit juice.

As a former cheese-aholic, The Uncheese Cookbook has quickly become one of my favorite cookbooks! I don't even think I could stomach real cheese anymore. In fact, (gasp!) I think I like the faux stuff — both homemade cheezes and the heavily-processed soy-based cheeses — even better than cow kind. I never thought I'd say that in my lacto-ovo days!

I really need to stop being cheap and order that cookbook already.

The danishes sound good. I love that it's a lot healthier than a real danish or a doughnut.

Wow. Tofu and maple syrup....that is a flavor combination I've never thought of before. But I am going to try it now! I'll let you know how it goes.

isn't that just the coolest what the combinations of flavors can create! mmmmmmmmm! i have to agree with you Bianca - i love, love, love "cheezes" much more than i ever loved cheese in my omni days. the processed "cheezes" are pretty yum, and i really enjoy the homemade ones! soooo gooood!

also, i need to get on this orange-grapefruit juice thing you've got go'n on. mmmmmmmm!

I've been thinking about getting that "Uncheese Cookbook" for a long time (it's been on my Amazon "wish list" for ages...).

That sounds yummy! I need to start making more stuff from the Uncheese Cookbook. I have it, but I really only make the Betta Fetta (which I love) and the nacho cheez.

what are your favourite recipes from that cookbook? i just got it recently and so far have tried the gooey grilled cheese (liked it a lot) and the chick cheez (did not taste like cheez even remotely but tasted okay).

I have no idea why I don't have that uncheese cookbook yet - as always, the raw food post is amazing! Especially need to try those date and coconut balls, but it all sounds great.

i'm glad you posted this recipe, because i've been pretty hesitant to try that recipe, but now i'll give it a go.

so far, i've made 4 recipes with that book: 1 has been awesome, 1 has been mediocre, 1 has needed some serious doctoring, and 1 wasn't that great. for now, i'll keep trying the recipes and making notes in pencil in the margins.

don't you just love that cookbook? I wish it was more avaliable (i.e. at bookstores) its fantastic... thanks for reminding me I need to try more recipes from it.

Ya know, I've looked at that recipe multiple times and thought there was no way it could be good. You make it sound good though. I've been looking for ways to get more protein into my breffixes, so I'll have to give this a try.
