Post Punk Kitchen Cookbook Challenge: Week Three
Week Three of the Post Punk Kitchen Cookbook Challenge was easy! We're supposed to make something from one of Colleen Patrick-Goudreau's cookbooks — either The Vegan Table or Color Me Vegan. Since I'm, like, Colleen's number one fan (not in a crazy stalker way, I swear), I just so happen to have all of her books.
Just like in PPK Challenge week's past, I opted to make a breakfast dish from one of Colleen's books. Neither The Vegan Table nor Color Me Vegan have breakfast sections, per se, but breakfast dishes are peppered throughout the books. I found her recipe for Peanut Butter Pancakes in Color Me Vegan:
Yummy! But not so colorful for a recipe in Color Me Vegan, right? It's okay. I found this in the Brown & Black chapter, which places emphasis on healthful colorless foods like mushrooms, sea veggies, and chocolate.
The pancake recipe doesn't call for chocolate chips, but Colleen mentions in a side note that several testers suggested the addition. And since nothing beats the combo of PB and chocolate, of course I tossed some in! I doused these in maple syrup, washed them down with a cold glass of soymilk, and served them with a side of my steamed Creole seitan sausages.
By the way, I've mentioned this before, but for anyone who claims not to have time to make pancakes for breakfast during the week, you should know that I don't either. I make a full batch on Sundays, and then refrigerate them. I microwave a pancake or two each morning throughout the week, and they taste just as fresh as if they were made that morning.

I like mine super hearty and healthy, I guess. Recently I've taken to wild rice flour (grind it in the coffee grinder) in my regular spelt pancake mix.
I definitely grew up a Swedish pancake gal, though, and only recently acquired a taste for American-style pancakes.
Our favorite pancakes right now is banana walnut, but the kids also love kiwi pancakes, chocolate chip pancakes, and strawberry pancakes. I rarely get to eat any. :-)
i just made a batch of pumpkin pancakes for the upcoming week! regretting not adding chocolate chips now...
I don't really make pancakes that often (What's wrong with me?)but my favourite are savoury ones made with zuccini and corn. So so good......
Woah, these look amazing! I'm off to order Colour Me Vegan- and I bet these will be my new favourite pancakes soon.
I love any kind of pancake and I could eat them everyday (sweet or savory ones) but these one look just perfect!
I love pancakes, but I am not a fan of savory versions. I love pumpkin and banana. Lately my waffle iron has been my best friend though.
My pancakes must always have chocolate chips. And these looks so dreamy!!
Those pancakes look perfect. I love pancakes & I usually make either the ones from Fat Free Vegan Kitchen or the Banana Flapjacks from Vegan Brunch.
I finally took your advice on the make-ahead process and made some buckwheat flaxseed waffles on Sunday for Drew and I to heat up throughout the week! I had one yesterday morning and it was awesome! I kept thinking, "Why haven't I done this before?!" haha!

So true about chocolate + peanut butter...that's what I eat for dessert sometimes, just a spoonful of PB with some chocolate chips sprinkled on top. Oldie but a goodie.
Pancakes come and go in my life in phases. Sometimes I just fiend for them, other times I could care less. But nothing beats the classic pat of butter and drizzle of maple syrup on a pancake.
I want that entire stack of pancakes!!!
I make my pancakes in a monkey-shaped grill pan. I thought you should know. :)

These are like Reeses Pieces Pancakes - I love it! You're doing so well on the challenge - I just started Vegan MoFo and I like trying to become more inventive with my recipes.
what a smart idea to make a big batch of pancakes on the weekend and then eat them all week. Very clever, Miss B!
I just got Color Me Vegan this weekend, at the SF Veg Fest, after wanting it for so long. I was flipping through it last night and it looks really amazing! I can't wait to cook from it!
Great idea to make a huge batch on Sundays. I'm going to follow that lead.
I was never a lover of pancakes until I went vegan. Now I love them. I really like spelt pancakes with blueberries. But the Golden Corn Pancakes from Vegan Table are another favorite.
I've been wanting to try those peanut butter pancakes; I think I'll make a batch this weekend.

I don't know, but it makes me feel like I'm eating something super healthy just because they aren't drowned in fake syrup, haha.

Mmm.... these look and sound so good. I love pancakes, and I have all of Colleen’s books too, but I haven’t tried this recipe out yet. My husband doesn’t like PB, but he does love pancakes so it seems every time I’m set to make a batch, he comes in and wants some.. Haha... I love blueberry, and banana pancakes, but more often then not I like creative pancakes, that use ingredients that aren’t commonly used.
I will definitely have to try these PB ones soon!

Pancakes! I like to make a batch on weekends too then reheat throughout the week. What I really need to do is make like a quadruple batch and freeze them so I can have pancakes any time. As odd as it may sound, I really like my pancakes a little undercooked in the middle. I eat around the edges and leave the center for last.
Peanut butter pancakes sounds fabulous right about now. Mmm!
I worship at the feet of Colleen! Her podcasts in particular helped ease my transition from omnivore to herbivore. I made her Red Velvet cupcakes from The Vegan Table for a birthday party and they were a huge hit.
I am not Vegan, but I am curious to some of these recipes. Do you have them posted somewhere?
