Tortilla Toss-Up

When I bought Vegan Brunch, I remember scanning past the recipe for Scrambled Tortillas and thinking, "That's kinda weird ... but intriguing." I made a mental note to try it out one day. I love me some corn tortillas, and they always come like a million to a package (what's up with that, anyway?). I had some leftover from another recipe last week, so it seemed time to try Isa's Scrambled Tortillas:

Basically, you take torn-up tortillas and fry 'em up with onions and jalepenos. Then you pour blended soft (not silken) tofu over the tortillas and mix it all up. The tofu cooks up and gets browned in places. Then you stir in some steamed potatoes, top it with a homemade Mexican-style tomato sauce, and guacamole. Yum! I also sprinkled mine with nooch, though the recipe doesn't call for it. One word of advice on this recipe: use hella more salt than it calls for! Other than that, it's a keeper. I'll certainly make this again.

On the side, I had some of my Creole Steamed Sausages:

I based this recipe off the famed Julie Hasson steamed sausages, but added my own spice combination for maximum spicy creole goodness. It's definitely going in the cookbook.

I've been eyeing that tortilla recipe, and now that you've successfully made it maybe I'll give it a go. Steamed sausages rock! Photos with the Dalai Lama rock even more!

I'm dying *DYING* for some corn tortillas here in Europe. Between the potato-kale enchiladas from Vcon and this recipe, I'm going to have to have my parents ship some to me or something...

And those sausages look amazing!

Weird! I also have 10,000 corn tortillas in the fridge. I don't know why they don't come in smaller packages, either, but I'm happy to eat them all!

I love the new blogs - it's like opening a Christmas present - all the vibrant colors, and it's a wonderful recipe. I finally got Vegan Brunch from the Library. It's really interesting. Thanks for posting this particular selection, and as always - it looks delicious!

You're right.... sounds like a weird recipe.... but it must be good! You're also right about the tortillas... I freeze them because who really needs 50 corn tortillas in one sitting??

i've added creole seasoning to my sausages before and it's damn tasty. truthfully, i add it to just about everything because it's so awesome.

i never would have thought about a tortilla scramble - it sounds so delicious! too funny on noting that tortillas come in packages of a million. we freeze ours and they last for damn near ever. :)

your spicy creole sausages look so delicious! i love me some creole yummies! mmmmmmmmmmmmmmm!

p.s. - dan & i tested out your seitan wangz this evening (we used tempeh to keep it gluten-free) - they were so freak'n awesome, Bianca! spicy and oh-so gloriously good! hot damn!

That's hilarious, I am about to post a soft taco dish with corn tortillas, and I was also going to discuss the crazily large amount of tortillas that come in the package. Those sausages look delicious!

That's like Chilaquilas that are usually made with eggs and tortillas or crisp chips! YUM! A little taco cause and I'm good.
