Let me count the ways. I've shown many a Vegan Brunch and Fat-Free Vegan Kitchen tofu omelet on this blog before. Hands down, tofu omelets are my favorite breakfast. This week, I've been enjoying the Vegan Brunch omelet stuffed with Follow Your Heart mozzarella cheeze and served with a side of sprouted grain toast with homemade strawberry jam.
Simple, sure. But in days past, I've stuffed the same omelet with spicy sauteed mushrooms and spinach. This omelet, made several months ago, was by far my best effort yet:
Back in March, I had a little less luck with this Fat-Free Vegan Kitchen omelet — stuffed with Teese and mushrooms:
At the time I made this omelet, I was quite proud of it though. After all, it held together — mostly. And it was a vast improvement over my first tofu omelet in May 2008 (also from Fat-Free Vegan Kitchen):
Yep, that one was more like a tofu omelet scramble. But despite its shabby looks, it tasted like gold. When I made that omelet, I lacked a proper non-stick skillet — an essential tool in tofu omelet-makin.'
So far, I've only made these recipes four times. But I assure you this isn't the last time you'll see a folded "eggy" omelet of goodness on this blog.

The first tofu omelet looks much like my first one. I'm thinking about buying a good new non-stick frying pan just to make tofu omelets - they're worth it.
Her recipes ROCK! I lurrrrvvvee the French Lentil soup with thyme and tarragon (Veganomicon)- I would eat it breakfast, lunch or dinner...as I would with most of her recipes...I have not tried the omelets...you have convinced me to have a go!
The tofu omelettes from Vegan Brunch are the best thing evvvveeer! Seriously, I rave about them constantly...and make them just about as often. They are simple and quick and SHOCKINGLY good. They are the best omelettes I have ever had, vegan or not! I could go on and on and on....I LOVE THEM! Your photos are gorgeous!

As to your question re running, I don't think I ever really get "wheezy." I had mild asthma as a child, but it pretty much cleared up 10 years ago. It seems like you're in a lot more well-rounded shape than I am! As of right now (just maintaining my fitness, but not trying to improve it like I was all summer training for the race), I'm just doing active yoga for an hour and a half on Mon, and running about 5 miles on W and F...
I do find that sometimes the first mile or 2 are the most tiring...once I get going, I'm usually good. And more often than not, it's mental, as evidenced by the fact that the 13 mile race felt easier than many of my 4 mile training runs. Maybe you should see your doctor about the wheezing! I have noticed that I don't breathe as hard on the elliptical as on a real run, however, so I know what you mean in that sense!
I never had any luck with the FFV omelette. I blame my tofu, I guess I just can't get the right kind here. Therefore I am so happy about VB and Isa's recipe as it works for me. Your omelettes look stunning.
You've gotten really good at making those. The top picture looks just like an egg omelette!
Wow, impressive omelet making skills! I tried to make the Fat-Free Vegan Kitchen Tofu Omelet and it turned up looking like your first one, as well. I DO need to get a better non-stick skillet. But, who knows...there may be one laying around the kitchen somewhere. Ha!

i love the VB omelet recipe but mine was nowhere near as pretty as yours turned out! I need to practice!
I love the VB tofu omelets! I haven't tried the FFV ones yet. I tend to make mine on the smaller side because the big ones always fall apart on me. Do you use the black salt that the VB recipe calls for? I haven't been able to find it yet, but they're still good without it.

GodDAMN, that looks good! This post seriously made my tummy growl. Those omelets look AMAZING - even the omelet scramble one. :) I have yet to successfully make a vegan omelet, but I will keep trying!

I love tofu scrambles but I've never tried making a tofu omlet. Mine would probably turn out even worse than your first attempt!! Ha! Have a great weekend!

I've only made the vegan brunch omelets once, but I LOVE it. So delicious, and so many possible fillings! It's way too yummy.
have you ever tried Joni's omelet, too? it's really good. like, really, really, really good. I'm reluctant to try another one since it is (really) good, but since I have VB, I'll give Isa's a try too after all the praises you are singing for it. c
