I rarely get food cravings since my meals are typically planned out by the week. I crave whatever I have written in the menu for whatever day I'm on. But sometimes, I NEED a Tofu Eggless Salad Sandwich:
This is one of my favorite warm weather staples — creamy crumbled tofu mixed with Vegenaise, plenty of dill, celery, and onion. Yum yum! Perfect with a few natural potato chips and a small green salad.
Here's my recipe:
1 pound extra firm tofu, drained, pressed, and crumbled
2 stalks celery, minced
1/3 cup green olives, chopped
2 Tbsp. fresh parsley, chopped
1/2 cup Vegenaise
1/4 cup pickle relish
1/2 tsp. turmeric
1/4 tsp. dill weed
1/4 tsp. sea salt
Freshly ground black pepper, to taste
Mix all ingredients in a large bowl. Spread on sandwiches right away or chill in the fridge.
Makes about 8 sandwiches.

looks delicious, i feel like it would also be delicious hybridized iwht a waldorf salad...meaning added walnuts, grapes, or apples, or all three! that tester recipe sounds mouthwatering.
I would have eaten egg sandwiches in my pre-vegan days, but this sandwich sounds totally awesome!
P.S. The package is on the way and I had a little chat with the lady at the post office who told me that air-mail is actually not much faster...so I sticked with my plan to send it by "regular" mail. I hope it won't get lost!
Hmmmmm, sounds so good Bianca. I keep meaning to make some tofu egg salad. I was such a big egg salad fan before I stopped eating eggs, but they were this special once in awhile treat. Tofu egg salad is totally better though, and faster because you don't have to boil anything :)
I hated mayo and eggs before going vegan, but I think that was partly because of their ingredients (raw eggs? EW!). Now that I'm veg, vegan mayo is awesome! And I've loved all tofu egg replacements (tofu scrambles & omlets) so I'm sure I'd really dig this!
Not to mention, that tester recipe sounds divine!

I feel the same way about tofu eggless salad! Every so often I just get an insane craving and I have to make it. Also, it requires pickles.

You know, I could never get near a real egg salad sammie, even as a kid I would gag from the smell. Your sammie looks really yummy, though!
I went to Trader Joes to get me some eggless salad and they were out!!! I did a search and your blog came up. lucky me!!! I will try this, thanks.
Just made it with a couple of differences. Used Dijon mustard, spring onions,twice the olives and no relish.
I also saw a recipe that suggested that you could grill the tofu before you shredded it and it gives it a bit more texture...
