A couple nights ago, I posted a review of Veronica Grace's new cookbook, Vegan Comfort Foods from Around the World. It's a collection of 60 low-fat recipes for classic comfort food dishes. We're talking vegan mac & cheese with broccoli, ranch dip, spaghetti with French lentil sauce, sloppy joes, baked ziti, you name it. If it's comforting, there's likely a recipe for it in Veronica's new book.
Well, I was supposed to host a giveaway of her book in that post. But I blog late at night, and I forget important things all the time. So I forgot to post about the giveaway! Here it is.

The other day I realized I'd love to recreate vegan port wine cheese and first I thought I'd add port wine to hummus because I figured I was the only person missing this but mr google found me two recipes which NEED to be made! One is but based the other tofu... So I'm picking those as my favorite vegan comfort food

My favorite comfort food is pot pie. I usually make mine with a Gardein product or seitan and lots of veggies in a creamy (vegan) white sauce. Pour into a round casserole and top with a pie crust or puff pastry. Hmmmmm making me hungry.

Oh man...I just made an awesome variation of pad Thai...using spaghetti squash! It was full of vegetables, sweet and tangy sauce and spongy tofu. Of course, it had a plop of chewy rice on the side. Total veggie comfort.

ReplyDeleteI love funeral potatoes! I know everyone calls them something different. But I make a vegan version of the classic favorite. Potatoes, sour cream, cream cheese, cheese, butter, onions, corn flakes, all baked together! Super unhealthy, but delicious and comforting!

When I describe my favorite comfort food, people often say "wow, you really are a Northern Californian, aren't you?": beans & greens. Black beans with garlic and smoked paprika, topped with braised kale made with a ludicrous quantity of garlic and lots of lemon juice.
ReplyDeleteHey Bianca! My favorite vegan comfort food at this moment is either my red-hot, protein-packed chili, or a homemade vegan poutine, with little guilt! The latter is a project in the kitchen, so I only make it from time to time (when friends are in the kitchen with me, heh).

My idea of comfort food: some sort of quiche (anything in a crust) and french fries - or for that matter, most things fried (eggplant, onions, etc.).

ReplyDeleteTacos! I now use Smart Ground, Tofutti Better Than Sour Cream, and Daiya Cheddar style. Everything else is the same: chopped tomatoes, lettuce, onions sauteed and mixed into the Smart Ground.
