Don't Skip Breakfast

I'm a huge fan of breakfast. I wake up each morning with a ferocious appetite and I must eat within 30 minutes of waking or I'll get nauseous and really weak. So I tend to prepare breakfasts the night before for a quick week day morning meal. Tofu Scrambles are a common go-to breakfast, but I typically use my own spice combination (onion and garlic powder, turmeric, basil, nooch, and a dash of celery salt). To mix things up a bit, I tried the Vegan with a Vengeance Tofu Scramble this time:

The spices are quite different from the ones I use and the cumin lends the dish an almost Mexican flavor. But it's delicious. Honestly, you can't go wrong with a tofu scramble.

I didn't have any mushrooms on hand, so I subbed diced tomatoes since I had plenty of those. I also added grated carrot, onion, and chopped chives from Granny's herb garden.

I served the scramble with a slice of Ezekial sprouted grain bread, spread with a teensy bit of Earth Balance and some homemade Pumpkin Butter that I picked up at a crafts fair back in September.

  2. Breakfast is my favorite meal of the day!!! I have to eat quickly too. That is my go-to scramble recipe, I have it memorized by heart...with a few moderations of course =)

  3. breakfast is my favourite too! I practically wake up IN ORDER to make oatmeal. but scramble is also delicious! someday I want to make scramble morning tortilla wraps, yum. :P

  4. I am the same way--if I don't eat within about an hour after waking up, I will get horribly nauseous. Therefore, I look forward to a huge breakfast each morning; I make sure I have at least 30 minutes to prepare and eat my breakfast leisurely. If I wake up late one morning, I will skip my shower in order to make and eat a hot breakfast. I blame it on my mother, who always cooked a hot breakfast for my family every morning, without fail.

    Tofu in the morning is not quite my thing, but I have been scarfing down Veganomicon's Smoky Grilled Tempeh with lettuce and tomato this week (no bread, I'm all out).

  5. here here for breakfast! i feel the same way about the most important meal of the day. i get into ruts. depending on what time of year it is will influence what i choose to eat in the morning.

  7. Hey, I'm about to make a tofu scramble right now! I'm pretty good about breakfast on weekends (or holidays like today), but I have a hell of a time eating on work days. I try to eat a Lara bar or packet oatmeal at work, but that's 3 hours after I wake up so does it even count? Arrrgggh! I just need to force myself to get up earlier. Maybe that will be my New Year's resolution.

  12. i know breakfast is important, but most days the thought of food that early turns my stomach. every once in a while i crave it, and that tofu scramble looks delish!

  14. Tofu scramble is so great - for me it's the only way to sneak a bunch of veggies into breakfast, and one of the many perks of weekend mornings. The pumpkin butter looks nice too, something else I need to try.

  15. I have to eat within 30 minutes as well! If I'm starving I grab an apple while I make something like steel cut oats or I get lazy & have cereal, a waffle, or toast!

  16. I feel like I'm going to die if I miss breakfast or even wait 30 minutes to eat. Literally. And, I love that Vcon scramble. it's actually my favorite. All that cumin must appeal to the SoCal girl in me.

  17. I don't think I've ever skipped breakfast in my whole life! It's so awesome and I can't imagine not being absolutely starved when waking up! My husband never ate breakfast before he met me and he always complained about not feeling well. He doesn't complain any more! Yay, breakfast!
