It's time for a giveaway! And I guess this is what you'd call a sponsored post. I don't typically do those. Sure, I get free stuff to review sometimes. But those are review posts, and I'm free to express my opinion — like or dislike — about a product.
But there's not much I don't like about Earth Balance. It's the vegan answer to margarine, and as a lady who used to eat dairy margarine by the stick (yes, my Granny let me do that when my parents weren't around), I truly appreciate having a delicious, non-hydrogenated, and widely available vegan alternative. So when Earth Balance contacted me about hosting a giveaway during Mofo, I happily obliged.
At the end of this post, just leave a comment (and an email address) about how you love to use Earth Balance spreads and I'll randomly select a few winners next Tuesday for some Earth Balance free product coupons.
But first I'm including one of my recipes from Cookin' Crunk: Eatin' Vegan in the Dirty South that I like to use a very specific Earth Balance product in. The Earth Balance Organic Coconut Spread is awesome in both savory and sweet applications. My omni boyfriend Paul just eats it plain by the spoonful. I wouldn't recommend that, but it's great on toast with nooch, used in stir-fries, melted over mashed potatoes. Or you can try it in my Granny's recipe for Old-Fashioned Coconut Pie from my cookbook.
Old-Fashioned
Coconut Pie
Yields one 9-inch pie (6 to 8 slices)
1 cup sugar
1/4 cup whole wheat pastry flour
1/2 teaspoon sea salt
3 tablespoons Ener-G Egg Replacer powder + 1/3 cup soymilk
6 tablespoons Earth Balance Organic Coconut Spread, softened
1/2 cup soymilk
1 1/2 cup shredded, sweetened coconut (divided into 1 cup
and 1/2 cup)
1 single pie crust, uncooked
Preheat the oven to 325 degrees.
Stir together the sugar, flour, and sea salt in a large mixing bowl. Set aside.
Whisk together the egg replacer and 1/3 cup of the soymilk in another large mixing bowl or in the bowl of a stand mixer. Add the margarine and beat until margarine is creamy. Add the 1/2 cup of soymilk and beat until everything is incorporated. Pour the flour mixture into the mixing bowl and beat until just combined.
Use a spoon to fold in 1 cup of the shredded coconut. Transfer the filling into the uncooked pie crust. Top with the remaining 1/2 cup of shredded coconut. Bake for 1 hour.

I do love earth balance! I have the coconut spread in the fridge and I keep forgetting to use it in anything. Looks like I need to make some pie!
ReplyDeleteLike nearly every other vegan I love earth balance. I love that they have been expanding their line lately!
ReplyDeleteBeccaMFerguson@aimm.com
I kind of let my kid eat earth balance straight up. Ok, I do let her. It started with, like you, her grandparents, and then it became a way to bribe/reward her into eating the rest of her meal: "eat X and you can have a plop of butter [always EB]" seems to work pretty well and now it's become her "thing" that we let her do sometimes (not everyday - but often enough that we go through the HUGE tubs of it pretty regularly!).
ReplyDeleteI have tried coconut spread by a few other companies but the local grocery doesn't stock Earth Balance in that flavor. I would probably have to go to Whole Foods or somewhere like that (hour drive). I did find an olive oil blend I like, tho.
ReplyDeleteI haven't tried that earth balance, I'd love to give it a whirl! And that pie looks yummy!
ReplyDeleteQueenhoneyb@yahoo.com
Earth Balance is awesome! Thanks for doing the giveaway!
ReplyDeletekayla.gillman [at] gmail [dot] com
I love earth balance! I drive an hour to whole foods just to get it :)
ReplyDeletehdezigns@gmail.com
I saw the coconut spread for the first time last month...seems like a gem in baking coconut desserts, like your pie!
ReplyDeleteI'd love to try it :)
laurenrose825@gmail.com
Earth balance is doing some great things. Now if they could only find a way to make it without palm oil.
ReplyDeleteBtw, I made the stuffed peppers from your cookbook a couple days ago and they are awesome! I switched out the TVP for some Upton's Naturals ground seitan and they were delicious! Thanks for the great recipe. My first stuffed pepper. Looking forward to trying more from your book. Maybe that coconut cream pie...
I haven't tried the coconut spread yet, but I've seen it in a few stores. That is a delicious looking coconut pie!
ReplyDeleteLove Earth Balance. It's great for baking and I love that it melts on your toast. The herb and garlic spread makes great garlic toast. Have a great weekend. jennscott214@msn.com
ReplyDeleteThe recipe looks delish! I'll try it with unsweetened vanilla almond milk and report back - I'm always on the hunt for a good soy-free vegan recipe.
ReplyDelete(The Earth Balance coconut spread is soy-free too!)
I'm flashtacks [at] yahoo [dot] com.
My wife and I love Earth Balance products, especially the Coconut Butter.
ReplyDeleteI love Earth Balance (show me a vegan who doesn't)! Just used it in some rice and beans to give it some richness.
ReplyDeleteLove Earth Balance! rockon0630@gmail.com
ReplyDeleteOK- this might be cheating. I'm not yet vegan. But I am exploring taking the plunge... every recipe I come across has Earth Balance in it, but I have yet to take the plunge and buy any, mostly because it's pretty pricey! I'd love to try it out!!!
ReplyDeleteLove love love earth balance !! i always have some in my fridge - i havent tried the coconut spread yet though !! We love E.B on our morning vegan bagel or waffles :) SO good !! Also can not wait to make that pie.
ReplyDeleteI love Earth Balance because it gives omnivores no excuses about butter. It tastes better even!! I love surprising friends and family with substitutions like this. Some have even switched over because the love the taste!
ReplyDeleteI love using Earth Balance on toast with cinnamon and sugar sprinled on top! Easy dessert! :)
ReplyDeletejessicaphenson@gmail.com
I don't know what I'd do without Earth Balance buttery spread...I use it in EVERYthing. I've actually never tried the coconut spread but I'm very intrigued!
ReplyDeleteacookinthemakingblog@gmail.com
I've just returned to The Dirty South after being away for over 20 years, almost half of it spend in the UK. I've been hearing about Earth Balance for years and have been wanting to try it. Now I have my chance. I'd love to have coupons to help me get started stocking my vegan kitchen here. It's been two weeks today that I've been back and haven't had a chance to start stocking up. When I do get some Earth Balance and have a chance to stock my pantry, your recipe is at the top of the list! I've also got your cookbook on my Amazon wishlist along with other cookbooks I had to leave behind. I'm a cookbook hoarder.

I would love to try the butter alternative! It looks great! Email is in profile!
ReplyDeleteI'd use it on my bagels in the morning. Yummy way to start the day.
ReplyDeleteWe're not vegan, but the Earth Balance Soy Free and Earth Balance Coconut Spread let my son, who has MSPI, enjoy yummy foods that would otherwise be off limits.
ReplyDeleteI wrote a review about Earth Balance spread and how much I love it. I was raised on butter and would ONLY eat that my whole life.
ReplyDeleteThen I met Earth Balance. This is the ONLY thing that I will eat besides butter. To me it actually tastes like butter! I use it when I bake and also to spread on my Ezekiel bread (also delicious!).
Thanks for the giveaway!!!
I use the organic buttery spread on toast, veggies, even crackers. And I use the sticks for baking. They make vegan cooking and baking SO easy!

Earth Balance is a daily staple in my house. One of my favorite tricks is to drop a couple of tablespoons full when making my vegan split pea soup. It gives it a tasty richness that is major YUM!
ReplyDeleteamberdelaney9@gmail.com
I love Earth Balance spreads. I usually purchase the Earth Balance Oilive Oil or Coconut Spread to use for cooking and baking.
ReplyDeleteI've loved earth balance since before I learned it was a vegan darling. It's just always been the best of the non-butter spreads. I've heard so much about their new products, I'd love to give them a try.
ReplyDeleteAnd the stuffed peppers someone talked about--I've gotta get on those!
I LOVE earth balance, and I also used to eat margarine by the spoonful (we got tubs). I would joke that I got butter sick, and years later my dad sent me an article about researchers surviving on butter in Antarctica and how they got sick from it. Truly butter sick. : ) I am in the process of moving and I haven't restocked Earth Balance for that reason--can't wait to be settled in and buy a new tub!
ReplyDeleteI LOVE their Coconut Spread! I spread it on toast, cornbread or my homemade vegan pumpkin bread (tis the season for pumpkin flavored everything!). It's amazing on pretty much anything really. mmm...

ReplyDeleteI use the soy free butter spread every day!
ReplyDeleteI love earth balance organic whipped, as well as the original! It's great in recipes or simply on toast or bread! I have not yet tried the coconut spread, but would love to!
ReplyDeleteI love it in/on nearly everything! I didn't even realize they had a garlic/herb variety!
ReplyDeleteWe love us some earth balance in our house! Who doesn't love butter???
ReplyDeleteI love Earth Balance too! I like it simply spread on some hearty whole wheat toast and I think my favorite recipe to use it in is a noochy cheese sauce! My email is sheridanposey@yahoo.com.
ReplyDeleteI haven't tried the coconut spread yet! I use the original and LOVE baking with it!!
ReplyDeleteicedlatteprincess@yahoo.com
I haven't used the coconut spread but would use it on the coconut pie (which I have a post-it on in your cookbook.) I love Earth Balance spread and use it on everything but especially love it on a warm slice of fresh bread just out of the oven.
ReplyDelete(email-lockesdaydreams@aol.com)
I am a newbie vegan (about a month now) trying to learn about vegan foods and cooking. I would love a coupon to try Earth balance!
ReplyDeleteI love Earth Balance soy-free buttery spread. I'd use it even if I stopped being vegan. Just had some with some Colombian arepas stuffed with corn and Daiya. yum.
ReplyDeleteI love Earth Balance (and YOU) but have not tried the Coconut spread yet! No doubt THIS will be the 1st recipe I try!!
ReplyDeleteThanks a million!
xoxo
Earth balance is the best ! I know some omnis and ovo-lacto-vegetarians who prefer it over butter !
ReplyDeleteI love using earth balance in baking! The coconut sounds delightful.
ReplyDeleteI love the Earth Balance with olive oil. Coconut Spread looks delish!
ReplyDeleteI love Earth Balance. For a vegan starved Memphis it is amazingly easy to find (Kroger). I stopped the Parkay sticks when I went through puberty and started gaining weight. Now it's Earth Balance for toast, bagels, grilled cheese, cookies, pie crusts, sauces, pancakes/waffles, corn on the cob, grilled tofu, etc...
ReplyDeleteBelinda, heflin5@yahoo.com
Earth Balance in vegan Mac--It's like heaven in my mouth!
ReplyDeleteI love using Earth Balance when baking cookies, but I enjoy it most as a topping on a stack of hot pancakes.
ReplyDeleteamandadianett(at)gmail(dot)com
Earth Balance is my "secret" ingredient in home made seitan! It gives it a nice savory flavor and moist texture. We can't get enough of the Vegan cheddar puffs-so good!!!!
ReplyDeletesurlygirly@optonline.net
I've been meaning to try that coconut earth balance for awhile, maybe I ought to pick up a tub then. The pie looks delicious too!
ReplyDelete(spencerjohnson272 [at] gmail)
I like the EB buttery spread for toast, but I like the sticks for baking. They always yield good results.
ReplyDeleteI love them because they are vegan and healthy! : D
ReplyDeletesi_convertia@yahoo.com
Simply cinnamon sugar toast! Melted spread, hot toast, cinnamon, sugar... all warm and gooey and crispy.
ReplyDeleteI have only recently started using the coconut spread and it's so frickin' awesome for cinnamon toast. Not kidding, really kicks it up a notch. Gawd . . . now I'm craving cinnamon toast.
ReplyDeleteprincesshouse3@aol.com
Lately I love Earth Balance on some homemade cinnamon bread toast. :)
ReplyDeleteEarth Balance is king, queen, and all that's in between. Fact.
ReplyDeleteI love the classic morning toast with butter (eg Earth Balance).
ReplyDeleteI love it on brown rice with almonds and coconut. So good!
ReplyDeletet_rich73@yahoo.com
My sweetie just discovered the magic of EB and has been slathering it on English muffins recently - I'd give a winning coupon to him!
ReplyDeleteI haven't tried Earth Balance yet, but I would love to try their coconut spread on a cinnamon raisin english muffin, yum! Or to top french toast.
ReplyDeleteI love your blog and I love earth balance! Sometimes as a snack I will spread a thin layer of EB on saltines with some nooch and then microwave it for 20-30 seconds and let cool, tastes like cheez-its sort of. Anyways, keep up the delicious work!

ReplyDeleteI love making carob chip cookies! The best part of vegan cookies is you can eat the dough worry free!
ReplyDeleteI use the Earth Balance sticks to make vegan versions of my family's traditional Christmas cookies.
ReplyDeletegaia (at) cinci (dot) rr (dot) com
I absolutely love Earth Balance! Whether I'm baking with it (vegan chocolate chip cookies mmm) or simply spreading it on some toast, I am always a happy customer. Plus my non-vegan friends can't even tell that it's dairy-free! Can't get much better than that.
ReplyDeleteLove Earth Balance, I even trick my hubby into thinking it's the regular stuff! :) I'd love to try the coconut spread... sounds delish.
ReplyDeleteThat coconut pie looks pretty awesome! Mostly I just love earth balance on toast. But it's great for baking on special occasions.
ReplyDeletesmckay3@uwo.ca

ReplyDeleteI can use it for my pancakes instead of regular butter!

ReplyDeleteb3tt13p4g3@gmail.com
I actually haven't used it yet, but I have been dying to!
ReplyDeleteAshleyknightt@gmail.com
I think it is generally recommended to use the stick versions for baking, but i always use earth balance spread for my baking needs...particularly in brownies. Works so much better than vegetable oil!
ReplyDeletelately my fave breakfast is warm soft polenta with earth balance and fresh scallions. so delicious! I also love it on toast of course, brown rice and in indian dal:)

Not sure if you already picked the winner, but I still wanted to say that pie looks delicious. I am a whore for coconut, I swear LOL. We love Earth Balance on/in pretty much anything but the coconut spread is a MUST for my husband's Sunday pancakes. A. MUST.
ReplyDeleteGreat for making grilled 'cheese'!
