In week two of the PPK cookbook challenge, we're supposed to cook from American Vegan Kitchen by Tami Noyes. Confession: The inclusion of this book was the main reason I signed up for the challenge. Tami's compendium of comfort classics (god, I love alliteration!) is among my favorite cookbooks.
Just like last week when I cooked from the Veganomicon for the challenge, I chose to go with breakfast. Many of Tami's breakfast recipes are more like what most people would consider brunch — heavier, more complex morning meals that satisfy for hours. But I'm a heavy eater in the morning since I always wake up with a grumbly tummy.
This dish of Mexican Style Beans on Bread definitely kept me full until lunchtime:
That's two slices of day-old wheat French bread coated in a savory French toast-style dip and then fried until crispy. They're topped with cumin-spiked black beans with diced tomatoes, corn, and onions. And that's all topped with tequila-lime salsa and avocado. Yes, you can say, "oh my gawd" now.
What's your breakfast style? Heavy foods? Savory meals? Sweet stuff? Lighter fare?
I'm actually not familiar with this book (and not really following the ppk challenge either) so thanks for highlighting it.
ReplyDeleteAnd I'm almost 100% sweet for breakfast. Oats, soy yogurt bowls, pancakes, french toast, waffles etc.
Yum! I might have to eat this for lunch and dinner as well.
ReplyDeleteI love savory, heavier meals in the morning (I tend to eat lighter as the day progresses). Beans over bread sounds like a little bit of breakfast heaven!
ReplyDeletei let my mood dictate my breakfast and brunch. it's my favorite meal of the day...i could do anything from a tofu or tempeh breakfast burrito to peanut butter waffles :)
ReplyDeletei could definitely get down with that black bean dish. i usually keep it light in the a.m., maybe a bowl of overnight oats, miso soup or a green smoothie. like to save my heavy meal for post-workout dinner.
ReplyDeletewow - those mexi beans 'n bread look amazing! hellz yeah. :) i'm a heavier, savory breakfast kinda girl. this makes me wanna get off my lazy bum and pick up Tami's book - i've heard nothing but awesome about it. w00t! i've never participated in the ppk cookbook challenges, but now i'm thinking i just might have to next time around. it sounds really fun and there are so many cookbooks we have that i haven't cracked open yet and should!

ReplyDeleteYou busted me, too, for my not so healthy eating habits. On weekends we have a huge breakfast and then nothing until dinner. I guess it shows in the book. :)
WOW, this looks soooooo good! I am ridiculously hungry for lunch now. Thanks Bianca. haha! I wish I was better about planning breakfast. I often wake up too late and just grab something quick, like cereal or an english muffin with nut butter. I'm sure I would feel better if I actually attempted to cook something for breakfast!
