Peanut Butter and Beets

Not together, silly! That would be disgusting. I had peanut butter for breakfast in the form of Peanut Butter Waffles from Vegan Brunch:

I've had my eye on these since I bought the book forever ago, but for some reason, it's taken me an age to make them. The batter is made with 3/4 cup of chunky PB, so every bite has a little peanut crunch surprise. The maple syrup on top really takes these over the edge of awesomeness.

    PICKLED!

    I'd like to try them in a salad or as borscht or something, but them pickled ones are just too good.

    And I'm just down with anything fermented. :)

  3. My favorite way to "eat" beets is juiced! Cafe Gratitude in LA has the most delicious juice called I Am Worthy and it's packed with kale, beets, celery, apple, and ginger juice. So good!

    Steamed baby beets on salad with a creamy miso dressing. My favorite.

  12. I love beets, and I love Kombucha, so I hope I win!! :) I love beets raw, cooked, or juiced, but my favorite way is probably roasted...mmm!

  16. I like them cooked, lightly sprinkled with sea salt and freshly ground black pepper. Basically exactly as my mother made them for Sunday dinners!

    My favorite way to eat beets is the beet salad at my uncle's Israeli restaurant, Hummus, in Philadelphia! :)

  21. I love beets pickled, roasted, or just the greens sauteed. I think beets are the most beautiful color, and they look like little jewels wrapped in foil.

  25. Peel, slice and roast in the oven with olive oil and rosemary. Sautee the greens with olive oil, balsamic vinegar and salt and pepper and top with the roasted beets. So good. Have made this with purple and also yellow beets.
