Soba-briety!

Sorry, I couldn't resist the silly title, but this post has nothing to do with sobriety. It does, however, have everything to do with soba noodles!

I'm attempting a bit of a pantry purge. I'm a total food hoarder. My pantry is straight outta TLC's Hoarding: Buried Alive. Well, it's not really that bad. More like a stockpile room on Extreme Couponing. Yea, I watch way too much TLC. Anyway, I'm focusing on using up staple ingredients for a few weeks, only buying the ingredients I need to use those pantry staples in recipes.

I've had a half-package of soba noodles floating around the noodle/carb shelf for some time. When I saw the Ginger Bok Choy with Soba in Appetite for Reduction, I knew it was the perfect chance to use up those noodles:

This simple, low-cal recipe is made with sauteed bok choy, ginger, garlic, red pepper flakes, and onion. I dry-fried some tofu, low-fat Isa-style to boost the protein (okay, really it had nothing to do with the protein ... I just like tofu in everything!). Simple, wholesome, delicious.

When it comes to food hoarding, my weaknesses are noodles and nut butters. I have jars and jars of flavored hazelnut, almond, peanut, and other butters, as well as loads of Ramen, spaghetti, and various shaped pastas.

What pantry items do you hoard?

  1. I am definitely a convenience food hoarder. Amy's soups and chili, just add veggies or tofu noodle kits. I always buy them and never use them as quickly as I expect

  2. I hoard pasta too - also dried and canned beans, all kinds of sauces & condiments as well. I like to think of it a "preparedness".

  6. I tend to have a lot of spices.

    I didn't know there was such a recipe in Appetite for Reduction. I am a huge fan of Bok Choy and soba noodles, so I'm sure I'll try this soon. Thank you for mentioning this recipe.

    Have you tried O'Hana House's fresh all-buckwheat soba? They're pre-cooked, so all you have to do is drop them in boiling water to warm them up. They do need to be refrigerated, but they keep for a long time (check the expiration date). Also, they're gluten-free, which a lot of "buckwheat soba" are not, since most have some wheat in them. Buckwheat is a complete protein, so I use these delicious noodles often (they're featured in the photo of "Tofu and Soba with Hot-Sweet-Sour-Pungent Sauce" in "Speed Vegan").

  9. my pantry is shameful, Bianca! i've got everything from dried beans 'n brown rice pasta, tomato paste 'n salsa, to seaweeds 'n almond milk and raw protein bars 'n jellies. it's crazy! but i do have soba noodles and i know what i'll be making super soon! mmmmmmm!

  10. I have way too many dried beans and dried grains. I've been trying to use them all up, like you. So I can start fresh. :-) I couldn't hoard peanut butter if I tried because my boyfriend is a peanut butter fiend.

  11. I hoard hot cereal. I have so many packages of Bob's Red Mill in varying grain amounts it's not funny. I forget how far a small bag will go. I'll be moving in a month, so I'm really trying to get my pantry clean.

  12. Oh man, I hoard a lot of flours, grains, and beans (canned and dried). I think I six kinds of flours right now and I just bought some masa harina for Cinco de Mayo... I also seem to have a lot of cans of diced tomatoes because I always think I'm out and then I buy more...

    However, I'm really trying to clean out my pantry this month because I want to go on a bulk foods run to Whole Foods at the end of the month (it's over an hour away). Then the whole process starts all over again!

  14. Yum, I love tofu in everything too, I'll find any excuse to add it to a meal. As for hoarding I think pasta's my main problem, I must have every shape & type in my kitchen!
