The weather in Memphis is all crazy right now. One day, it's 70 degrees, and hours later, the temps have fallen into the 50s. We've had tornado warnings and crazy storms. Spring is definitely on its way in, but there's still a chill in the air and that's a perfect excuse to make stew. Okay, honestly, I don't really need an excuse to make stew, but it sounded like a nice blog post set-up.
Anyway, when perusing my copy of Appetite for Reduction, the Veggie Pot Pie Stew grabbed my attention:
I think it was the addition of yellow split peas (the corn-lookin' bits in this bowl) that made me do a double-take. Also, who doesn't love pot pie filling? This chunky stew is just like the inside of a pot pie, sans the pie part.
In the book, Isa suggests serving the stew with her Sweet Potato Drop Biscuits:
I've always rolled and cut my biscuits, mainly because I've had one bad experience with dry drop biscuits. But I took a chance on these, and I'm glad I did. The mashed sweet taters make for a ridiculously-moist, melt-in-your-mouth biscuit free of shortening and butter! Well, there is a little oil, but these biscuits are still far lower in calories than what I'm used to. Only Isa can make low-cal taste this good.
On another note, the Farm's Book Publishing Company is hosting cookbook giveaways on their website throughout the month of March. Titles include Speed Vegan, The Natural Vegan Kitchen, Vegan In 30 Days, The 4-Ingredient Vegan, Becoming Vegan, and Vegan Bodybuilding & Fitness. Click here to enter.
What "winter food" will you miss the most when spring finally arrives?
Super yummy! I have a pot pie stew recipe, and I haven't made it in like 2 years. Thaks for the reminder. I guess now I'll have to get that cookbook... because I need sweet potato biscuits in my life omg! :)
ReplyDeleteI am sorry to hear about your weather. I think I would miss exactly such a pot pie in summer when I am melting away. I do crave this kind of food then but can never make myself cook it.
ReplyDeleteI really need to make those biscuits! I'm actually working on a gluten free biscuit recipe that is also low fat. I think it's nuts to even try.
ReplyDeleteWhen Isa did her book signing here, she said this stew was one of her faves from the book. I need to try it soon!
ReplyDeleteI think the food I'll miss most in the summer is my roasted root vegetables and my cream of wheat breakfasts. I don't really like hot cereals when it's hot outside.
ReplyDeleteOn the flip side, I'm excited to start grilling veggies instead of roasting them!
I'm so glad you made these two recipes! I just got Isa's book last night and I was thinking of making those, as it's getting colder here too. It looks delicious, and I'm glad the sweet potato biscuits went so well!
ReplyDeletePot pie was one of my first 'real' under-takings while I was vegan. Your picture made my mouth water!
ReplyDeleteYellow split peas in a stew does sound amazing. I don't have Appetite For Reduction yet, but I'm pretty tempted to make up something similar now. Yummers. Sweet potato biscuits are always so moist and delicious, by far my favourite type of biscuit. I'm seriously into comfort food right now, this sounds like the perfect meal to me!
ReplyDeleteWhat a great combo, pot pie stew and sweet potato biscuits so golden they almost look like fried chicken.
ReplyDeleteI've loved these last few posts especially because when I was 13 (!) I met Stephen, InaMae and other original Farmers in SF before they moved to Tennessee on a field trip with my junior high class. I'm sure this would never be allowed in today's educational climate, but it sure was fun then, and Farm news always interests me.
