Punky Pasta

I rarely make the same recipe twice. Well, when I was testing for my cookbook, I had to. But when I'm trying things from other cookbooks, I tend to opt for new dishes every time. But every great once in awhile, I stumble upon a recipe that I must make again and again. This Punk-Kin Pasta from La Dolce Vegan is one of those:

I've been making this recipe for years, and I'm really not sure how I've never managed to post about it before. Hell, maybe I have and I just can't seem to pull it up using my search function.

Anyway, I do have a rule about only making this dish in the fall or winter. Since it contains pumpkin, I only make it when it's in season. I guess pumpkin time is really over, but it's still February. And I had some frozen pumpkin puree and Morningstar Farms burger crumbles in my freezer that needed to be used.

The sauce is so simple — just pumpkin puree, onions, a little water or stock, and veggie burger. But it's oh, so delicious! I tossed in some brown rice & flax pasta spirals and topped the dish with Daiya mozzarella. Voila!

  1. Yessss. My favorite is tofu pizole. I garnish way too much with avocados, shredded red cabbage, cilantro, lime, etc. YUMMM. And it only takes about a half-hour to make. When I was a meat eater, it took me half a day to make it.

  2. I'm the same way - I have so many cookbooks but I hardly use them, so I have to power my way through to make them seem worthwhile and rarely return to one book in particular.
    I have made the spinach lasagna from Vegan table about 3 times, however, mostly because my boyfriend loves it. That's probably a record for me.

  3. I rarely make recipes twice, too. There#s one exception though: pasta with marinara sauce. But that's not even from a cookbook.

  4. I really never use recipes cuz I'm too busy cooking my own.. but I sure get inspired from them.

    I make a great pumpkin white bean sauce for pasta and do a delicious winter lasagna and baked ziti from it

  5. Sounds super tasty! I made a pasta sauce from pumpkin and ground almonds once that was really awesome.

    I usually don't make recipes twice either, ever, but if I'm cooking for other people I'll usually go back to something I know is good. The one that comes to mind is the Fiesta Pasta Salad from La Dolce Vegan.

  6. I super love this recipe! Never gets old, and it feels like such a decadent meal. I am quickly making faves out of the Vegetarian Mother & Baby book, which oddly has great hummus, felafel, stir-fry, etc. recipes.

    the only exception is that I have a favourite muffins recipe in one of my cookbooks that i use the base for everytime without fail!

  11. mmm that looks so good! I have similar rules about pumpkin-flavored things only being appropriate in fall and winter... I thought pumpkin season was pretty much over for me, but seeing that photo has me craving pumpkin again now!

    Where did you find Vegan Morningstar Crumbles? I know they used to be, but I double checked tonight and they had milk and eggs in them :(
