Vegan Kickstart Is Over!!!

Friday was Day 21 of my 21-Day Vegan Kickstart plan, and that means the cleanse is officially OVER!!! Though the meals on the plan were pretty yummy, I'm so glad to be done. I was growing weary of being told what to eat. Plus, I was craving vegan cheeze and chocolate!!

The last day began with a decadent breakfast of Banana French Toast and Vegan Sausage:

Though I was trying to avoid processed foods during the cleanse, I decided it was okay to eat vegan sausage on the last day. I used Lightlife Gimme Lean.

Lunch was leftover Ratatouille Sauce and White Beans over a Baked Potato:

That was a damn tasty use of my leftovers. In fact, I'm having the same thing for dinner tonight since I have some sauce left.

Since it was the last day on the plan, I got an extra special dessert — Blueberry Muffins made with real evaporated cane juice! These were moist and yummy with a hint of orange.

My dinner was Hearty Chili Mac:

This was also made with processed food — Gimme Lean Ground Beef Style. It was the last day, so what the hell? Even the picky boyfriend liked this dish made with quinoa macaroni, corn, kidney beans, crushed tomatoes, and the veggie burger. I made a lot so I'll be eating this for a few more days.

My fruit snack — enjoyed after dinner — was fresh Cantaloupe with salt and pepper (the ONLY way to eat cantaloupe):

  2. congratulations! I've really enjoyed seeing all the different kinds of food on your plan, but I'm sure it was annoying having to prepare three totally new recipes every day!

  3. Cantaloupe with salt and pepper? I'll have to try that. Congrats on the last day of your cleanse! I have one more week to go on my detox.

    Rockmelon (aka Cantaloupe) with salt and pepper... intriguing. I need to go and try this!

  9. Bianca, I love putting black pepper on my watermelon, but I've never tried it on cantaloupe!

  10. Oh my gosh why haven't I ever eaten cantaloupe with salt(pepper seems weird though). It would really bring out the flavor since it does with watermelon. Well I must try that next time I find myself eating cantaloupe.

    Also I enjoyed looking at some of your meals during your kickstart challenge, but it's always so much nicer not being told what to eat.

  11. Hooray for finishing the cleanse! I give you a lot of credit for doing that. I think I would have caved after a few days. I am totally intrigued by the idea of cantaloupe with salt & pepper.

  13. So many people use quinoa pasta and I've heard good thing about it.. do you like it? I had some years ago that I thought was horrible, so I've never gone back.

  14. Were you able to reheat the quinoa pasta? I learned the hard way that making cold pasta salad out of quinoa pasta doesn't work, because it gets really hard/tastes like it's uncooked when it's cold...but I never tried reheating it, so I'm curious.

  15. congratulations! it's impressive you stuck to it. I went vegan for three weeks but I don't think I could have followed a strict plan.
