Ch-ch-ch-chia!

I finally tried vegan overnight oats, and I liked them. A few months ago, overnight oats were hot stuff in the blogosphere. All the cool kids were making them. I kept making a mental note to try them, but my mental notes never stick around very long. I finally remembered to give the oats a shot one day last week when I noticed some chia seeds looking all forgotten and lonely on my pantry shelf.

Here's the Overnight Oats I enjoyed one hot summer morning last week:

I used this recipe for Easy Vegan Overnight Oats from Oh She Glows. It's super simple and kinda raw-ish. Just whole oats, chia seeds, a mashed banana, plant milk (I used soy), and vanilla extract. I topped my bowl with a healthy dose of Smart Balance peanut butter.

You mix all the ingredients up (except nut butter) the night before, place the bowl in the fridge, and let the chia seeds do their weird, expanding magic. The next morning, you've got a creamy bowl of oats best enjoyed cold from the fridge. Perfect cool breakfast for a humid summer morning.

Will I trade my steamy, creamy hot steel cut oats for overnight oats? No. But the cold chia version will be a tasty occasional treat.

Have not tried chia seeds in oatmeal. At first, I think it sounds weird to eat cold oatmeal, but I don't know why I say that since I love mushy cold cereal like soaked shredded wheat.

I was happy to come across your blog because it's great but also because I live about 2 hours from Memphis and never know where we should eat when we're there. I looked through your Memphis guide. What's your favorite, most vegan-y yet not Asian/Indian, etc. place? Thanks!

I want to love the overnight oats with chia seeds but I simply hate the texture! I use chia seeds in dehydrated crackers or directly into the blender for a smoothie, but that's about all I can handle! LOL

i literally have never had oats for breakfast - cold or hot. but people like you swear by them... i must try it!

I also thought they sounded weird, however, I gave them a shot. And boy was I glad I did. I have been eating them every morning for a while now. I have found my special recipe that I eat most mornings. 1/2 cup oats, 1 cup soy milk, 1 TBL Chia, 1/2 tsp vanilla, 2 TBL choc protein powder. In the morning, I make "soft serve" that I layer with the oats. I put 1 frozen banana, 5 or 6 frozen cherries and 1 TBL roasted carob powder in a food processor and blend until creamy. I then top the whole thing with some unsweetened coconut. (sometimes I add a dash of cinnamon to my oats mixture, too) YUMMY!!

I've actually never tasted chia.. in anything. I'd have to order a bag online and I'm just being cheap about it. :)

I haven't made vegan overnight oats this way yet...typically I soak the oats overnight (usually with almonds and sunflower seeds), then in the morning I drain and rinse them in water. The only reason I do that is b/c in all the raw literature I read they always recommend rinsing whatever you soak? So I sort of assumed that would hold true for oats as well but I guess it doesn't really matter.

I'd give overnight oats a try, but I don't think I'd be able to trade them in for hot oats either.

Man, good call on saying 'plant milk'! Seriously, I always say soy/nut/seed/grain milk, and that's just a pain to constantly type. For now on, I will refer to it as plant milk! :)

I love the whole over night oats/breakfast cookie craze. I haven't tried chia seeds yet though for some odd reason.

I just tried overnight oats last week. I'm not jumping on that bandwagon like I did green smoothies, but it's a nice summer breakfast every once in a while. I preferred mine once they reached room temp.

i recently tried some overnight oats, too. had mine with walnuts & maple syrup. they were a nice change and yummy after a humid morning run. :) i love that chia seeds are so super good for you, i just wish my stomach could handle them. makes it most sadfaced, but maybe i need to slowly reintroduce them again - they're just too awesome not to try again!

Oh man! I want to be one of the cool kids but it will never happen because I don't like oatmeal. *sigh* I'll always be an oddball! :D

I love overnight oats! My favorite way to make them is equal parts oats and almondmilk, then I mix in golden flax seeds, chia seeds, and maple syrup. Before I eat it I usually top it with strawberries or bananas and shredded coconut and cinnamon.

Okay, so I think I just displayed my passion for oats...

I also tried your Fluffer Nutter Oats... it equaled awesome! Thanks for the idea!

Man, I like overnight oats wayyy more than hot oats! I feel like you can taste all the flavors better! Still have never had chia seeds though!

I've had my eye on this recipe for a while, too, and have been meaning to make it. It cracks me up how you and I are often on the same page (even if you are several steps ahead of me!). :)

I finally tried these as well a couple of weeks ago, and while I really liked them, I can't say I adored them. Like you, I think I still prefer my cooked steel-cut oats (especially my baked oats!) and could never give those up!
