I Love You, Vegan Yum Yum!

I assume most vegan foodies have "to-make wish lists" a mile long. To give you an idea of how ridiculously back-logged I am, I just now made Vegan Yum Yum's Tomato Basil Cream Pasta ... though Lauren posted it in August of 2008!

I'm insane for waiting so long. This dish came together in less than 20 minutes and it's crazy, crazy good. The best part? The recipe is conveniently available on Vegan Yum Yum's FREE iPhone app! But if you don't have an iPhone, the whole thing (with gorgeous step-by-step pictures) is on Vegan Yum Yum's blog.

The sauce gets its creaminess from blended raw cashews (no soymilk!) and a large, fresh ripe summer tomato. If you haven't tried this yet, make it while the tomatoes are still tasty! There are only a few weeks of tomato time left in the South and I'd imagine it's the same in other areas as well. Ah, how I'll miss juicy summer tomatoes...

  3. That does look pretty damn good! I tried this recipe once but my crappy old blender wouldn't blend the cashews so it was kinda lumpy...I think I'll give it another go soon.

  6. my "to make" list is probably 2 miles long, and currently hindered because hubby and I are squatting in the In laws house til we close on our house - 2 weeks!

    so hopefully my pantry will be stocked and I'll be rarring to go for Oct - Vegan Month of Food??? does it happen every Oct? Do you know? i can't find info on this years on ppk :(

  7. Ah, yes, I love this dish. I also just got her cookbook and I'm itching to make a few of those dishes. As for the taco salad, I probably should've clarified that the old name was race-ier. In a bad way. My mom would kill me if she knew I posted it in a public forum,but I will say that it included a derogatory name for Mexican immigrants. I'm not sure what they (my mom and grandma) were thinking; now, they're embarrassed.

  11. I love Vegan Yum Yum! VYY and YOUR website are some of the first blogs I found when I went vegetarian! I have used the VYY app in the grocery store when I'm prepping to make one of her recipes! YOU should develop an app too! I'd get it! :D

  18. Oh my gosh, Bianca, I totally agree! I made this in Scotland last year, and I couldn't believe how delicious it was compared to how simple and easy to make it was too. I made it for my parents over the summer too and they were practically worshiping me..

  24. I made my own version of this last night (subbed in some red capsicum/bell pepper because I didn't have enough tomato). You totally inspired me to do it.

    I honestly thought creamy stuff made from cashews was a stupid idea... Plus I'm not a fan of cashews... But you made me want it so much.
