Sausage Pancake Tacos

Ever seen those Jimmy Dean frozen sausage & pancakes on a stick? Well, even in my meat-eating days, I don't recall ever trying one. But for some weird reason, I got a craving for sausages rolled up in pancakes. Using a couple of Vegan Brunch recipes — Cherry Sage Sausages and Perfect Pancakes — I attempted to create a vegan version of the classic sausage pancake roll-up ... but they look more like Sausage Pancake Tacos:

See? Tacos. I can't even begin to describe how awesome of an idea this was. Isa's Cherry Sage Sausages, made with the classic Julie Hasson steamed gluten sausage method, are amazingly good! And the simple Perfect Pancakes recipe complements these little dudes so well. I made both mini-sized sausages and smaller pancakes to create an easy-to-hold roll-up. I dipped my tacos in heated maple syrup. Mmmm-mmmm.

By the way, I'm entering these in Chocolate-Covered Katie's Pancake Challenge, a vegan food blogger contest challeging folks to create delicious pancakes recipes. At first, the contest was actually for dessert pancakes, but Katie later said savory flapjacks were okay too. There's still a week to get involved, so join up if you haven't already!

Since I made enough sausages and cakes to last all week, I get to eat this meal again and again. Damn, now I can't wait until breakfast....

    It reminds me of the vegan sausage/waffle cart in portland (that i've never been to, but fantasize about)...I think they serve them with maple syrup too! Love the little toothpicks holding them together.

  7. They look even more gorgeous than I imagined they would! I'm so glad you found the time to make these! If I get the chance, I'm so going to make them for my dad this weekend... I wonder if he'd be adventurous enough to eat vegan sausage. I bet if they looked that good, he would!! (Of course, I'll save some pancakes for me, too!)

  8. This is so good. This is what i use to do with pancakes when I was an omni. Because I love savory breakfast. Ha ha I have some stiff competition now.Have not seen these toothpicks in forever they really suit this dish.
    Jokes aside it was honestly a great way to think up of pancakes from the norm.

  13. i have an intense love for sausage and pancake on a stick. we had them at my school when i was little, and they. are. so. good.

    alas, i haven't had any since giving up meat, but this looks so awesome i may have to try it.

  18. Maybe I'm just pervert, but something about those seems kinda dirty to me. (You know, because it's a SAUSAGE in a pancake TACO and also I am five.) I bet they are delicious, though! Yum.

  23. 5've never seen or even heard of a Jimmy Dean frozen sausage & pancakes on a stick thing but this veganised version looks pretty rad!

    Not sure about sausage and maple syrup though...it's one American thing I just can't get my head around!
