Until last night, I'd only made bagels once. And that time, it was pain in the butt. The recipe I'd found online (which I've totally lost now) called for lots of unnecessary steps. I swore I'd never make bagels again — until I saw Isa's simpler recipe in Vegan Brunch:
These were so easy! Just make the dough, let it rise, shape into bagels, boil, and bake. That's all there is to it. I used whole wheat bread flour instead of all-purpose, so mine were more like mini-bagels. But that's okay. It just means I can eat two instead of one!
This morning, I made a Green Monster Bagel, spread with avocado and a dash of salt:
This idea was inspired by Shelby of La Belle Vegan and Emily of Curly Top (who refers to these as Green Monsters). I used half an avocado spread over 4 bagel halves (that's from two small bagels). Thanks to the generous dose of healthy fats and whole grains, I stayed full well past noon (and that never happens!!). As for taste, I think plain avocado tastes a bit like eggs, so this was perfect for breakfast. I'm having the same thing again tomorrow!

ReplyDeleteI can't wait to get my copy of Vegan Brunch! How many times have I said that now? But really, these look so perfect! I always thought bagels were something I couldn't make, you know? But it seems like they turned out very well for you, so maybe I would be brave enough to give them a try. Mmmm...avocado on anything is my idea of heaven.
ReplyDeletewe made bagels well over a year ago, and they were a pain in the bum as well - have yet to make them since. maybe we both tried the same recipe! ahahahahhaa! i need to get vegan brunch and give them another try! i bet dan would adore some homemade bagels (and i can whip up some g.f. ones for myself! mmmmmmm!). your bagels look perfect, Bianca - and i love the avocado on top. i too think avocado tastes a little eggy, i also think grits taste a bit eggy as well. mmmmmmmmmmmmmm!

ReplyDeleteI have never made bagels and am unsure as to how well that would turn out for me - I am "special" when it comes to baking and usually leave that to the professionals. But your Green Monster bagels look and sound delish. I love avocado so much!

ReplyDeleteGlad to know the bagel recipe's easy! Some of the recipes I get most excited about making are those that make products that most ppl (including me usually)buy packaged in a store: bagels, granola, salad dressing, hummus, tortillas, etc...you just get such a big sense of accomplishment!
