Black Salt Is My New Best Friend

Lemme just say this on the record: Isa Chandra Moskowitz is a genius! Thanks to her new Vegan Brunch book, I have discovered my latest love — black salt. I enjoyed some mixed in and sprinkled over this Vegan Brunch Tofu Omelet:

Black salt, which Isa highly recommends for this recipe, smells and tastes EXACTLY like eggs. Seriously. I hunted down a pack at a local Indian market, and I was blown away by the smell of eggs when I tore open the pack. I sampled a little on my finger, and I was swept back to my childhood Thanksgivings, when I ate way too many of mom's deviled eggs. It is that good.

In the omelet, the black salt (which is actually more of a pinkish grey) makes the tofu-based mixture taste like an actual egg omelet. I've tried Susan V's omelet before, and I still love that recipe too, but I'll never make enother faux egg dish without black salt. Anyway, enough gushing — go buy some and see for yourself. It's widely available at most Indian markets. And I'm sure it's available on the Internet too.

I stuffed this omelet with mushrooms, spinach, and mozzerella Teese, and scarfed it down for dinner, along with these Roasted Potatoes with Fresh Rosemary, Paprika, and Garlic:

I mixed a couple of Isa's roasted potato seasoning suggestions together. These crispy taters were the perfect complement to the very realistic omelet. Vegan Brunch is totally my new favorite vegan cookbook of all time, partly because of the black salt revelation and also because breakfast is my favorite meal — no matter what time its served.

  5. yeah, Vegan Brunch is a totally great book. I've made so many things from it already, and they've all been totally great. I love it.

    I was totally tripped out by the black salt! I couldn't believe how eggy it was!

  7. I don't miss the food from my pre-vegan days with one major exception: eggs. We ate a lot of them growing up and I came to depend on them as the ultimate convenience food as an adult. Black salt totally scratches that itch and tastes eerily like eggs! I can't wait to try her omelet recipe; I'm slowly working my way through Vegan Brunch...

  10. I just made that omelet, and the smell of egg coming out of my food processor when I mixed it all up was actually kind of freaky! I loved the resulting omelet though, it was so tasty. I have to try those potatoes, too. We have been rocking the hell out of that brunch book at my house, we're in love with all of the waffle recipes too. And I can't wait to try the oven baked hash browns!

  14. I have to say, I am tempted to go to my nearest Indian food store in search of black salt. I love the flavor of the guts of a deviled egg. Not the white yucky part. Before Vegan, that is all I liked when it came to eggs of any kind. Thanks for the great tip!!!!

I think black salt must be having a moment :) - I found some powdered black salt at the local Indian grocery, but wasn't sure it was the same thing, because it had that pinkish black color...not quite like the photo in the book. Thanks for the heads up, that must be the stuff! Can't wait to try it.

  16. I've been preaching the wonder that is Black Salt for years, but evidently not loud enough. It is entirely the reason I was able to give up eggs many years ago... Try it with mashed tofu/pickle/mustard in an "egg salad" sandwich. Amazing and it'll fool even die-hard egg-salad fans, I promise!!
    I LOVE the new Brunch book too, great stuff!!

  33. My friend and I were recently discussing about how we as human beings are so hooked onto electronics. Reading this post makes me think back to that debate we had, and just how inseparable from electronics we have all become.
