Oh nachos, how do I love thee? Lemme count the ways. Or lemme just show you this picture of today's lunch — Black Bean Teesy Nachos:
Probably the best meal I've had all year so far. Seriously. I love nachos more than anyone could ever understand.
These are made with a base of crunchy Guiltless Gourmet Yellow Corn Chips (baked, not fried) and topped with black beans, Nacho Teese sauce, homemade guacamole, Roma tomato, black olives, and a few Trappy's jalepeno peppers.
The Nacho Teese (which my dad ordered for me last month from Vegan Essentials) is absolutely amazing. It's softer than the regular Teese, but it still comes in a tube. Nuke it in the microwave for 30 seconds and it turns into a spicy sauce for all your nacho needs.
As for the guac, I mashed half an avocado and stirred in a clove of garlic, a tablespoon or so of red onion, diced tomato, the juice of one lime, and plenty of salt and pepper. I can't wait to eat more of these for lunch again tomorrow!!!!

ReplyDeleteNo wonder they're your fav food! Also, I love Celine's comment. I just placed an order with Pangea on Monday, which included a jar of Nacho Chreese. I'm super excited to add it to the taco salad I make every week on Wednesdays when my dining hall has a taco bar that includes vegan beef/chicken fajita strips, all the fixing (guac etc) and fresh salsa! but that chreese will just take it out of the park!
ReplyDeleteI almost never make them, but I do think that nachos are about one of my favourite things in the world. If I could get vegan cheese here I would probably eat them way too often!

ReplyDeleteI haven't made nachos since going vegan as most of the vegan cheese available here is freakin awful. I do miss them though and the look so good!!

ReplyDeleteI seriously love nachos, and yet I haven't had them in ages. What is wrong with me?! I really do think I am going to have to try Teese sometime, it looks like it actually melts, and all I have heard are good things.

ReplyDeleteOoh, nachos! I made some with the Teese nacho cheese too & I think we use the same chips. Real Food Daily in LA has crazy good nachos. You'll have to visit them in LA sometime!

Def make any subs you want, but I do recommend that you keep the dried cherries if you have access to any because they really took it to the next level! I'd love to hear what you come up with. Also, I can't wait until summer break in a month when I can go home and test all your amazing recipes that I got behind on :(
