Halloween is my favorite holiday ... well, except for Christmas and my birthday. Actually, Thanksgiving is pretty cool too (yea for Tofurkey!). But I do love dressing up, slathering on the fake blood, and going out with friends on Halloween. I also love to bake for the occasion. Last night, I made these cute fall-themed Vegan Sugar Cookies:
The fall cookie cutters, new cookie sheets, a wire baking rack, and parchment paper were in a bag of assorted kitchen items that I got for my birthday earlier this month ... and well, those items combined can only mean one thing — COOKIES!
I couldn't find a plain ol' sugar cookie recipe in my cookbooks, and the ones I've made from various Internet and Veg Times recipes in the past ended up hard and crunchy. I like a soft sugar cookie, and I remembered a recent cookie post by Katy at Legally Vegan. She swore this VegWeb recipe for Just Like Granny B's Sugar Cookies was the best thing ever!
And ... oh ... my ... goddess, she was right! These are the best sugar cookies I've ever had. They're soft. They're chewy. They're perfectly sweet and buttery. I will NEVER use another sugar cookie recipe again. Promise.
I did substitute whole wheat pastry flour for all of the white flour in the recipe, cause that's just how I roll. I made the icing with 2 cups of powdered sugar, 2 tablespoons of soymilk, and 1/4 tsp. vanilla. Then I mixed food colorings to make fall colors. Decorating them was so fun!
For Halloween, I'm going to my Me-Maw's Halloween party in the early evening. My grandma throws a family party every year and we eat hot dogs (veggie dogs for me!), chips and dip, and dessert. I'll share posts of my dessert contribution over the weekend. Until then, trick or treat!

Happy Halloween! I made some cookies from VegWeb with a friend last weekends and they were the worst cookies ever! I wish I had yours here and now!

ReplyDeleteThose cookies look delicious! Last weekend we made some fun ones in a Wilton pan that makes them in little halloween molds. Yay! I used a Sarah Kramer recipe but they ended up more like tea cakes or something. But they were good!

Hey, you did a hell of a lot better decorating those leaf cookies than I would have - trust me. They look really yummy and it is nice to hear of a recipe for a soft sugar cookie that is vegan!
