The Black Beans on Toast recipe is one of my favorite breakfasts from Sarah Kramer's La Dolce Vegan. It's simple, savory, and pretty filling. I made a batch on Sunday night and I've been eating them on Ezekial Bread (topped with Teese) for several mornings:
Typically, I mash the beans with salsa, cumin, garlic powder, and veggie broth, but I had some extra noochy cheeze sauce in the fridge Sunday night. I subbed that for the broth, so the beans were not only Mexican-y, but cheezy too!
On another note, I've found a place to live! It's a 3-bedroom house with a fenced-in backyard. And my awesome neighbors are all moving one street over. I won't move in until the end of the month, but I've already started packing (which sucks).
On a crappier note (literally), my poor kitty Akasha is at the vet tonight. He went in this morning for constipation and they found poop lodged so far into his colon that it was touching his stomach! He's getting regular enemas until it comes out. Poor kitty! That has to suck!
The beans on toast recipe sounds really good; I'm going to look it up in my copy! Congrats on finding a new place to live, but I'm so sorry your kitty isn't feeling well. :(
ReplyDeleteAwwww, poor kitty! Those beans sound tasty, though. And to answer your question about the ghosty guy in my photo yesterday - he's a salt shaker my boyfriend got somewhere. But he's so cute I decided to stick him in the picture.

ReplyDeletemmm... that sounds like the perfect breakfast, makes me nostalgic for my first vegan days. I hated cereal, but ate mashed beans on everything, with salsa and stuff. anyway... congratulations on the new place! and I hope your cat feels better soon. :O

My cat just went through the same thing. A very expensive with the sedation and enamas and sub-q fluids. You'll have to switch to wet food and give laxatives from now on.

Ah, poor kitty. That almost happened to my Nico when I switched foods on them, but luckily I noticed it fairly early. I should know better though. My 25 pound beast is sensitive to everything. I hope Akasha feels better soon and gets to come home. And speaking of home, congrats on finding a new one!

Kitty enema sounds like no fun. Maybe kitty needs to have some beans with you in the mornings?

ReplyDeleteI currently have seven cats. I've switched to all wet food for all of them (there's one kibble addict that gets fed separately, but she's slowly coming around). The cost of the wet food will work out to be less than the cost of the vet bills. Just like the cost of your vegan diet will save you in doctor's bills.
Yay for finding another sweet place to live! Boo for sick kitty, poor thing! And yay for beans on toast, yum yum.

ReplyDeleteI went through that with my cat recently he's had an ongoing problem with constipation for a few years now, but I had to take him in last month for an enema. He was not happy, they kept him overnight and he was absolutely terrified (he was so exhausted when I picked him up in the morning, poor kitty).
