Pie in the Sky

On Saturday night, my mom and I saw Jewel perform at an outdoor concert in the Memphis Botanic Gardens. But first, we stopped for the Vegan Pizza at Lou's Pizza Pie:

Piled high with spinach, eggplant, tomatoes, red onion, and artichoke hearts, this pie hit the spot. I'd been craving veggies all day, and I'm pretty sure this meal fulfilled my daily recommended allowance. Not to mention that we also had Lou's garden salad with garlic mustard vinaigrette.

It was the first time I'd tried the vegan pizza at Lou's. In fact, I just heard they had one a few weeks ago. Anytime I learn a restaurant owner has gone out of his or her way to create a vegan menu item, I get really excited. This is Memphis after all, and um, it's not exactly a vegan mecca.

As tasty as the pizza was, once we got to the Jewel show, we were wishing we'd brought picnic food. Since it was an outdoor performance, EVERYONE had coolers and picnic baskets. Some people even brought their own portable picnic tables and bouquets of flowers to decorate. Oh well, maybe next time. At least we had some good eatin' before the show. And Jewel was amazing, especially when she yodeled during the encore.

  1. Ooh, that pizza looks so fresh.

I have always loved Jewel...who knew her fans were so sophisticated (flowers?)!

  2. that's got to be the tastiest, healthiest pizza I've ever seen.
my cat could compete with Jewel's yodeling, by the way.

  6. Is that fresh basil under the eggplant and tomato? Hands-down the best pizza combo ever.

  7. Oh my goodness, what a pie!! I say, you can't have too many vegetables on a pizza :0)

I haven't listened to Jewel in soooo many years - I really need to do so!

  8. I'm with you-- it's so exciting when I find a vegan-friendly restaurant in meat-heavy, barbecue-heavy Texas.

The pizza looks like the perfect pre-concert fuel.

  9. Such a pretty pizza! I like that the pizza is all veggies - the only time I got a specifically vegan pizza in a restaurant it was all soy cheese and fake meat and not that tasty.

  11. That looks amazing! So fresh & yummy.

Regarding Mabel getting homemade vegan food... (I wrote this in a comment on my blog, but thought I better put it here, too.) Unfortunately, she is not vegan. :( I wish I could get her to eat vegan food, but I swear to you that she will NOT. Sometimes she'll eat a little bit of my leftovers, but she seems to get tired of it after a couple bites, no matter what it is. I absolutely HATE meat for her, but I've come to terms with it because her options in food are very limited (she has no teeth!), and as you can tell from that post, she's INSANELY picky. If she doesn't like it, she won't eat it--no matter how hungry she gets! Ugh. It's really frustrating, but I can't starve her... And by making her own food, I can at least control where the meat comes from. It's not a perfect situation, but I'm her guardian & I need to make sure she eats & gets the nutrients she needs...

This is LONG. One sidenote: The meal in the picture for that post *is* vegan. She does like Yves-brand "hot dogs" (as do I, obviously!), but she'll only eat those once in awhile... Plus, they're not cheap, so I couldn't afford to sustain her on those alone! Ha. I wish.

  12. P.S. That is supposed to say "I absolutely HATE preparing meat for her"; I typo'd it.

P.P.S. I am jealous of that concert! I bet that was a really fun time with your mom! And eggplant is my all-time favorite pizza topping. It's amazing.

  15. Oh man I want that pizza. Yum.

I am hoping all the stuff I made actually sold! I haven't heard anything from Dianna yet. Drunk swimming in your underwear, huh? That helps to explain why she looked so hungover when I dropped the goodies off!

I don't have a shrink-wrap machine, but I do have shrink-wrap bags, which are pretty much awesome. Just fill, then blow-dry! I ordered a ton of them online because I'm planning on using them for my business... eventually.

  16. That pizza looks incredible! I get extremely excited about vegan restaurant dishes in St. Louis as well. We also have a concert series in our Botanical Garden where some folks go all out, with candelabras and white table cloths. I guess Memphis and St. Louis have a lot in common!

  17. That pizza looks fabulous! I too get really exicted when I see a menu item marked vegan or better yet, with vegan in the title. I feel obligated to try it. I think more and more restaurants are starting to get the hint too.

  18. I'm so behind. Man, not having internet sucks. This is where I left off weeks ago...

But, anyway, that pizza looks awesome and I wish I could've seen Jewel!

    Come visit!
