For years after going vegan, there were two things I missed the most: egg-y omelets and melty cheese. Thankfully, I discovered Susan V's vegan omelet from Fat-Free Vegan Kitchen, followed shortly by the omelet from Vegan Brunch. And by then, there was Teese and Daiya to stuff into my omelets, so my vegan prayers were answered. I even dedicated a post a few years back to my trials and successes in cooking pretty omelets.
But then I got Happy Herbivore, which contained yet another tofu omelet recipe — the Nomelet:
Although the concept is the same, the omelet is baked in a cake pan rather than cooked on the stove in a skillet. The baking method results in a thicker, heartier omelet. Look how thick that sucker is!
After it came out of the oven, I stuffed half the omelet with Pepperjack Daiya Cheese Shreds and sauteed peppers and red onions. Then I heated it in a skillet sprayed with non-stick spray to melt the cheese. Served with a slice of toast with blueberry jam, this was the ultimate breakfast.

I haven't made omelets in ages! I need to make them again soon, I have half a pack of silken tofu in my fridge so if it isn't mouldy already maybe i'll make them saturday.
This is my favorite HH recipe. I love the baking method. Tim doesn't like them, but I pretty much live on them whenever he goes out of town.
great looking food there. the Vegan Brunch omelets rock my socks. I have a huge problem with HH though, she banned me from commenting (censorship! no free speech at HH!) because i kept pointing out all the unhealthy things in her foods. She claims to be all about healthy and she's not even close, she just has a legion of followers who admire heer knack for making quick entrees.
i'm not vegan, but I love tofu and love love vegan omelets (I have vegan brunch, it's so good). That one is so different and yummy looking, need to pick up the book asap
I might try that cooking method, because I've been so unsuccessful in flipping tofu omelettes without breaking them.
In regards to The Health Sleuth's comments, I'm glad that someone pointed out that Happy Herbivore's idea of "healthy" isn't always so. She doesn't eat avocados or nuts because they're too fatty, but she will eat Gimme Lean processed faux sausage. Are you kidding me?!
YUMO!!! That is one tasty looking nomelet! I haven't tried to make a vegan omelet yet, but have been wanting to ry HH's. Looks like I need to make it sooner than later now. :o)
I think I might like the Nomelet more than an omelet. I've never been a fan of eggs. :)
ps--had the Gardein burger. Wow! I still love the original Gardenburger best, but the Gardein burger is the best of the fake burgers, I think. No weird texture!
Not even joking, I made the Nomelet last week and kept saying "nom, nom nom, such a good nom-elet!" I was not as creative with you in the stuffing (I turned them into Breakfast Sandwiches in the book) but I agree with the great flavor!
