Cuckcoo for Coconut

I love coconut more than life itself. Okay, maybe not that much. But if I was stranded on a deserted island and could only have one fruit, I'd pick coconut. Lucky for me, coconuts just so happen to grow on deserted islands.

When I saw Lucious Coconut Bread on Krys' Two Vegan Boys blog a while back, I asked Krys for the recipe. She copied it from VegWeb and e-mailed it to me and I put it aside for a future breakfast treat.

Check out the cool vintage snack tin with cracker, potato chip, and pretzel flowers in the background. My mom got it for me for Xmas!

I finally made it last night and it is so super good. The coconut is toasted in a skillet before adding it to the batter, so it has that special magic that only toasted coconut can have. You can find the recipe here, but I subbed whole wheat pastry flour for the all-purpose and added a 1/2 tsp. of coconut extract.

Now I'm just a little sad cause tomorrow is Raw Food Day, which means I don't get to eat any coconut bread tomorrow. Of course, I'll consume the rest every other day this week ... just not tomorrow.

I'm not too big on coconut...but maybe thats just because I'm scared of the fat. Good fats, Shelby..Good fats! haha The bread really looks delicious though.

Eek, a raw day in winter! I wish I could but I'm just too cold.

saw the new tester recipes this morning and i can't wait! already made out my grocery list for next week and we're gonna try everything. i can't wait!

coconut = the shiznit! i love it so much! totally gonna have to try out the recipe & use your substitutions, too. whole wheat is awesome - i love that you use it, too! hooray for some whole grain goodness!

the coconut bread looks amazing though.. soo amazing. i need to try it.

Yum! Have you ever tried making raw macaroons? I haven't, but I've made a raw coconut lime cookie that turned out spectacular..

Thanks Bianca so much for the Coconut Bread recipe link.I tried it right away and it was indeed heavenly.Loved it.I live in India and since coconuts are available fresh here at a very decent cost, I used fresh grated coconut and toasted it for the bread.My family is vegetarian(my husband vegan, my son and myself occassional non-vegans!)I love the blogs you post and have learnt a lot about vegan cooking.Especially the baking part.
