Vegan cheese-maker Julie Piatt (who is married to ultra-athlete/podcaster Rich Roll) moved her<a href="https://notcheese.srimu.com/"> SriMu cheese shop</a> into Crosstown Concourse several months ago, but it took a long time for the space to get its license to serve alcohol. They've been in production for months, and anyone could go in and buy wheels of cashew cheese to take home. But now they're serving vegan charcuterie boards, paired with wines.</p><p>Some vegan ladies and I met up there on Friday night to check it out! Each had three cheeses. One had Bertie Camembert (with truffle oil!), Fire (the spicy one), and Spire (SriMu's take on blue cheese), plus fig jam, olives, pistachios, stoneground mustard, and fresh and dried fruit. The other board had Bonfire (the smoky cheese ball), Gold Alchemy (a smoked gouda), and Cloud 9 (like fresh mozz balls!).</p><p>These were so good, and we gobbled every bite and pretty much licked the boards clean. Neither of us live there anymore, but my me-maw still does, so we meet up for grandma visits sometimes. But we always start with lunch at Native. It's Jonesboro's only brewery, and they have several vegan menu items. And this week, I made her <b>Cheeseburgers</b>. These are veggie-based patties with black beans, mushrooms, bell peppers, sundried tomatoes, red onion, and spinach, topped with Violife cheddar and all the fixins. It's really nice to have a classic homemade veggie patty sometimes. This also has black beans and mushrooms, but the mushrooms are oyster, which gave the soup a really nice, meaty texture. It's my favorite road race, and the medals are amazing. This year, I just did the half because I'm not getting back into long-distance stuff until this fall. And my friend Kate from Memphis Hash House Harriers signed up to run it, too. So, we made a plan to run together.</p><p>But first, I stopped by the race expo on Saturday afternoon. It usually starts at 8 am, but the weather was predicted to be unseasonably warm on Sunday, so they moved the race up by two hours at the last minute. I was not too happy about this, but there wasn't much I could do. And turns out, it never really got that hot. Temps were in the 60s (not 70s), and there was cloud cover and a drizzle. Oh well. </p><p>Kate and I stayed together for the full 13.1 miles. I had originally planned to go for a PR when I signed up, but once Kate signed up, I decided to treat this as a fun run so we could run at conversational pace. But Kate is faster than me, so she kind of pushed me more than I realized she would. And I ended up finishing with my second-fastest time! I'm so used to running races alone with headphones, so this was a nice change. And even though I can eat at City Silo at home, I'd never been there for breakfast/brunch. It was super creamy and very different from my usual ramen. The tofu sheets gave the noodle dish a nice, chewy texture. Now, I never liked real tuna. But lately, I've been craving vegan tuna. I bought some canned Tuno on clearance at Sprouts (haven't eaten it yet!), and I picked out the recipe for the week. It's made with hearts of palm, lots of spices, seaweed, and a mayo-based sauce. It had a mildly fishy taste from the seaweed, but it wasn't overwhelming. And the texture of the hearts of palm was perfect.</p><p>And speaking of Tabitha Brown, I'm also working my way through her Cooking by the Spirit cookbook. I've had my eye on her <b>Pumfu Scramble</b>, with soy-free Pumfu tofu (made with pumpkin seeds). She avoids soy for allergy reasons, and I thought it'd be fun to try a tofu-free scramble. But I couldn't find Pumfu. So I decided to make the recipe using tofu! It was heavy on veggies with mushrooms and kale, and unlike most scrambles, this one didn't have turmeric. So it had a different flavor. I'd run 12 miles that morning, and I only had a smoothie after. So, I got pretty hungry by midafternoon. Luckily, the Tacos Mondragon food truck that was parked there had <b>Veggie Burritos</b>. This was good and hit the spot! It had rice, beans, and corn salad. And I waited too late to try and make reservations. Most of the places we usually go for a vegan-friendly fancy meal were booked up. And then I remembered this little Italian place, <a href="https://www.marcianorestaurantmemphis.com/">Marciano</a>, across from my pharmacy that always looked empty. I even sat in the pharmacy lot one day a few months back and googled it to see if it was even open. I learned then that it was, and despite always looking empty, it had good Yelp reviews.</p><p>So we called Marciano, and they had plenty of space! And they had vegan Fettuccine Primavera on the menu. But there was still plenty of space. The servers were super nice, and we talked to another couple who ended up there for the same reason we did — it was the only place they could find a table for Valentine's dinner.</p><p>We were served bread and homemade pesto when we were seated, though I requested olive oil for dipping since pesto isn't usually vegan. I ordered a glass of chianti and the <b>Beet Salad</b> to start. This salad was awesome! It's big beet chunks, mixed nuts (almonds, pistachios!), and balsamic dressing. I had them leave the goat cheese off. Most places around here treat primavera as an afterthought with a few tomatoes and maybe some artichokes mixed into a bland pasta. I only have one of these pasta bowls. It's shallow and wide, and I love it, so I use it all the time. Last night, on Valentine's Day, it held my <b>Sausage & Veggie Pasta</b> from Tabitha Brown's <i>Cooking by the Spirit.</i> Paul had to work late on Wednesday, so I had a little solo V-Day at home with an evening run, pasta and The Office, and a nice bath. Hash groups across the country have red dress runs for charity, and some kennels (that's what we call clubs in the hash) make their red dress run a big festival. But Slutty Vegan's Birmingham location was just one mile from the hotel, so most of our group carpooled over for dinner. I've been wanting to try Slutty Vegan for years! It's takeout only, and when they call you to pick up your order, one of the workers sings "You gotta bust a move for your food!" And you're supposed to dance for your food. We all had a lot of fun with that! Not sure what was in the slut sauce, but it was really good. The burger came with fries, but I ordered on the automatic ordering system, and that wasn't clear. So I also ordered extra fries. Oops. It's about 35 minutes from my house in Midtown Memphis, so I don't get out that way much. And in rush hour traffic, it ended up taking me 45 minutes to get there. I get off work at 3:30 p.m., and I forget that most people are off at 5. So, yea, I should have left earlier. But anyway, I got a lot of stuff! </p><p>I picked up a pack of frozen <b>Tteok Bok Ki </b>— Korean rice cakes with a gochujang-based sauce. I love these little rice cakes, and it was convenient to have the sauce already made. I just added tofu and broccoli to make a full meal. I created a <b>Curry Burger </b>by mixing curry powder, garlic powder, and hing into Impossible meat, and I made a curry yogurt sauce for topping. For the fries, I tossed potatoes in olive oil and dry garlic chutney and baked them in the air fryer, and then I served them with Indian ketchup (a spicy ketchup I buy at the Indian market). So good! So, I made these last week. Cauliflower is tossed with harissa paste, but I didn't have any of that. I did, however, have a harissa seasoning blend, so I used that instead. And I added some chopped tofu with my cauliflower mix for protein (wasn't in the recipe). That's all baked and then stuffed into a pita with cucumbers, pickled onions, and tahini. And then that snow lingered for a week! Oh, and on top of that, there was sleet mid-week that added a solid sheet of ice to the streets. So, I stayed home for five days. I have a Subaru, and I know it's built for driving in snowy conditions, but I'm not comfortable driving on ice, especially because Memphis drivers are wild. </p><p>By Saturday, I was going stir-crazy. So, even though there was still a bit of ice on the streets, I made plans with some friends to get dinner at Good Fortune Co. It was brutally cold outside, and I knew hot noodles would hit the spot. The burritos were stuffed with broccoli, peppers, and mushrooms and were covered in a tasty red sauce. So I'll be sharing those in posts early this week. Now that it's over, I'm hoping to find better balance with whole foods and processed ones. Definitely planning to have an Impossible burger this week, and I'm working Daiya cheese back in to several meals. But my ideal day would be about 80% whole foods and 20% processed. And if I'm having a fake meat for dinner, I'd like to have a whole food breakfast and lunch, rather than a full day of fake meat. </p><p>I do pretty good with that strategy for most of the year, but I tend to fall off in October (my birthday month) and just let things go through the holidays. January is a great time to get back on the 80/20 wagon!</p><p>Anyway, here's a <b>Chocolate Almond Smoothie Bowl </b>from Plant You Revitalize. I prefer smoothies to smoothie bowls because there's something weird about eating a cold smoothie with a spoon. So it definitely wasn't the most seasonally appropriate meal. And lunch that day was this <b>Vegan Cobb Salad</b> — also not very warming. But it was so good! It has tofu egg, which is made with nooch and black salt and baked in the oven. And the coolest part: rice paper bacon bits! You brush rice paper with a smoky marinade and then bake until crispy, and then you just crumble it up. I don't think I've ever made a stir-fry with beans, but what a good idea! The beans were heavily seasoned, and then spread into tortillas with cashew cheese. And then they're baked in the oven until crisp. You dip cauli florets in a seasoned breadcrumb mixture and bake, then toss with a sweet and savory sauce, and then bake again. Also, I've noticed all of Carleigh's recipes call for white rice over brown rice (probably because of the arsenic issue), and I'm here for that. I put the jackfruit, potatoes, carrots, onions, and broth in a slow cooker on Friday morning, and then cleaned my house and got groceries, and the pot roast was ready when I got home. I don't always love jackfruit, but it works well as a pot roast sub. I typically do some sort of reset plan, where I focus on whole foods. And this year is no different. Well, maybe a little different. Typically, I'd choose a month-long plan and go hard. But this time, I asked the server if they could make veggie fajitas. And he said, "Are you vegan?" I told him yes, and he said "No problem." And then he came out with this lovely plate and a side of corn tortillas. They change the "bacon" veggie up based on what's in season. Sometimes, it's carrots. Other times, it's mushrooms. On the side, I had a delicious cup of <b>Turnip Soup</b>. They are Danish recipes and 100% not vegan. So I've been trying to veganize them. This skipper stew (the American nickname for skipperlabskovs) is made with beef brisket, so I used seitan that I'd made awhile back and froze. Other than seitan, it's just potatoes, vegan butter, spices, and scallions. Really hearty! It's traditionally served with rye bread and pickled beets, so that's what I had.<p></p><p>Here's the <b>Tahini Chickpea Soup</b> from Nava Atlas' <i>Soup for All Seasons.</i> The broth is made with a bunch of tahini, and it's loaded with chickpeas, cabbage, and mushrooms. She lists out ingredients and loose instructions, but the rest is up to you. And I love that! I’m a bit of a free spirit, but I’m also very Type A. So when measurements are given, I tend to follow them. But really, I just want to be free!<br /><br />I made this <b>Stuffed Spaghetti Squash</b> recently from the book, and it was as good as it looked! The combo of chicken, cheese, and stuffing sounds a little weird, but it was actually super good. And most importantly, what do you eat?<p></p><p>My OG blogger friend Cadry Nelson of <a href="https://cadryskitchen.com/">Cadry's Kitchen</a> has you covered with her book, <i><a href="https://www.amazon.com/Living-Vegan-Dummies-Cadry-Nelson/dp/1394211015#:~:text=Living%20Vegan%20For%20Dummies%20shows,life%20and%20satisfies%20your%20belly.">Living Vegan for Dummies</a></i>. It's one of the Dummies series books that really breaks down every little thing you need to know to give up meat, cheese, eggs, and other animal by-products. I've known Cadry for years, and we've met in person back in the Vida Vegan Con days. I couldn't think of a more qualified vegan to write this book. Her recipes are so approachable and delicious. </p><p>This book has plenty of recipes, but it's also packed with information. Each chapter covers a different aspect of veganism, and it's really the only guide you'll need to walk through the transition. She's got a section on how to enjoy the holidays as as vegan with alternatives to Easter eggs, planning a vegan wedding, accidentally vegan candy for Halloween, and how to survive your first vegan Thanksgiving. She's also got a chapter on substitutions for things like eggs, milks, cheeses, and meats in cooking. And there's a chapter on staying vegan while traveling — whether that's a flight, a road trip, a cruise, or a camping trip.</p><p>As for the recipes, Cadry keeps it easy with both whole food, plant-based dishes and a few that call for some plant meat staples. I tried one of each to give you an idea of what you'll find in here. I started with <b>Black Bean Tacos</b>. These simple, healthy tacos are made with seasoned black beans and all the fixins. When my Granny was alive, my dad's side of the family (plus, my Me-maw; that's mama's mom) would gather at her house, and she'd make a big ole breakfast. She always burned the biscuits. That was a tradition, too! Since she died, my mom has taken up the breakfast tradition, though it's just the three of us now. I did find the folded egg patties in Memphis though, so I brought those for us to have. They're good, but I still prefer the bottled kind for meals like this and the folded for sandwiches, but having them was better than nothing. We also had biscuits and gravy, Impossible sausage biscuits, Field Roast sausages, and hash browns.</p><p>After breakfast, we opened presents. I got a bidet! And then I headed back to Memphis. Paul got home around 6 p.m.-ish, and then we opened gifts with each other and the pets.
