So, hi! Those mashed sweet potatoes look sooo delicious. Every year for Thanksgiving my mom would make cooked carrots. I literally looked forward to them all year. They were just sliced carrots cooked in butter, but they were the best! Last year she veganized a little pot of them for me and cooked them with earth balance and they were just as good.
